  • 2 packs bacon (brown sugar)
  • 12 brioche burger buns
  • 6 tbsp olive oil
  • 6 tbsp salted butter
  • 1 tsp garlic and herb breadcrumbs
  • ½ cup Worcestershire sauce
  • 2 tbsp garlic powder
  • 5 tsp smoked paprika
  • 4 tsp onion powder
  • 4 tsp Creole seasoning
  • 2 tsp black pepper
  • 1 dozen jumbo eggs
  • 12 slices sharp cheddar cheese
  • 1 cup Miracle Whip
  • 3 tbsp Mexican hot sauce
  • 1 head iceberg lettuce
  • 1 tbsp brown sugar

For the Breakfast Potatoes:

  • 2 ½ lbs Yukon Gold potatoes
  • 2 red bell peppers
  • 2 green bell peppers
  • 2 large sweet onions
  • 2 tsp salt
  • 1 tbsp seasoned salt
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 2 tsp black pepper
  • 2 tsp parsley flakes

Toppings:

  • Shredded cheddar cheese
  • Green onion, diced
  • Sour cream
  • Saltine crackers, diced (optional)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Wash and dice potatoes (with skin) into ½ inch pieces.
  3. Drizzle potatoes with olive oil and lightly salt. Bake for 20-30 minutes.
  4. On a baking sheet, lay strips of bacon on foil and bake at the same time as the potatoes.
  5. In a mixing bowl, combine the ground angus beef, breadcrumbs, 2 eggs, Worcestershire sauce, and dry spices. Use your hands to mix the ingredients together.
  6. Take a handful of the beef, roll into a ball, and then gently flatten it to create large burger patties. Lay them on a large plate or serving tray for easier cooking purposes.
  7. Heat a large skillet over medium high heat and add olive oil and butter.
  8. Cook 2-3 patties in the skillet at a time until cooked through. Repeat for all patties until cooked.
  9. In large frying pan, fry eggs (2-3 at a time) in olive oil and butter until cooked and slightly brown on edges.
  10. The last 30 seconds to a minute or so for each egg, top with a slice of sharp cheddar cheese and cook until cheese is slightly melted.
  11. While the eggs and patties are cooking, dice the bell peppers and onions, then sauté in a large sauté pan.
  12. When the vegetables are softened, take the potatoes from the oven and add to the pan, along with the dry spices for seasoning.
  13. Remove bacon from the oven and set aside.
  14. In a small bowl, combine the Miracle Whip and hot sauce. Spread a generous amount on top of each burger bun, then build the burger. Layer bottom bun, angus beef patty, fried egg with cheese, lettuce, bacon, and top bun.
  15. Plate the breakfast potatoes next to the burger and serve hot!
