Ingredients
For the Pork Dinuguan:
- 1 lb pork cheek / face
- 1 lb pork belly with skin
- 1 lb pork ears
- 2 bulbs garlic
- 1 red onion
- 1 small knob of ginger, minced
- 6 green long chili (sili espada)
- 8 stalks green onions, sliced
- 2 stalks lemongrass
- 1 tbsp ground black pepper
- 2 tbsp coarse salt
- 3 tbsp fish sauce (adjust to taste)
- 2 Knorr pork bouillon cubes
- 1 tbsp brown sugar
- 3 tbsp cooking oil
- 1 cup white vinegar
- 4 cups edible pork blood (previously frozen)
- 4 cups tap water
- 1 tbsp soy sauce (optional)
For the Puto:
- 3 cups of jasmine white rice (previously soaked for at least 6 hrs)
- 1 can coconut milk
- ¼ cup granulated sugar
- 1 tsp baking powder
- Salt
- Banana leaves, cut into pieces
- Non-stick cooking spray
Garnish:
- Crushed pork cracklings
- Green onions, sliced
Instructions

Start cleaning the pork face, belly, and ears. In a pressure cooker, add 4 cups of water, 2 tbsp coarse salt, one bouillon cube, lemongrass stalks, ground black pepper, and green onions. Turn on the pressure cooker and let cook for 10-15 minutes

After the pork meat is tender, remove from the pressure cooker and cut into small pieces. Set aside the broth. Prepare garlic and slice the onions.

Heat wok or large braiser pan and add cooking oil. Sauté garlic and onions, then add pork meat and green chili. Add fish sauce and white vinegar. Wait for the vinegar to boil before stirring.

Once vinegar boils, add ground black pepper, remaining bouillon cube, and brown sugar. Add pork blood slowly while constantly stirring. Once silky brown, add water or reserved broth and soy sauce if needed. Sprinkle it with minced ginger and green onions.

Wait for another 3-5 mins before turning off the stove.

Drain the water from the soaked white rice and place in a blender. Add coconut milk, a pinch of salt, granulated sugar, and baking powder.

Turn on the blender until desired consistency is achieved. Let it sit for at least 10 mins.

Turn on the steamer, spray non- stick spray on rice cake molder, then place the banana leaf liner.

Pour the mixture on the molder, once steamer is ready, place the molder and steam for at least 35-40 minutes.

Serve pork blood stew with rice cake.
