Green Chile Sundae Recipe | PBS Food

In Hatch, NM, “the chile capital of the world,” you can eat their famous chiles on just about anything, even ice cream! This Green Chile Sundae is an adaptation of the ice cream sundae at Sparky’s Restaurant where vanilla ice cream is layered with Hatch green chiles, chocolate syrup, and whipped cream.

Yield: Serves 1

  • 1½ cups vanilla ice cream, divided
  • 1 fresh Hatch green chile, charred, sweated, skin and seeds removed, and diced
  • ½ cup chocolate syrup, divided
  • 2 generous tablespoons whipped cream

  1. Place 1 cup of the vanilla ice cream in a bowl or ice cream cup.
  2. Add most of the green chile, leaving a little extra for topping, and drizzle on most of the chocolate syrup, again leaving a little for topping.
  3. Add the rest of the ice cream on top and stir to mix it all up.
  4. Top with the whipped cream and remaining chocolate syrup and green chile.
