Make Three Kid-Friendly Noodle Soup Dishes: Pasta e Fagioli from Italy

When we think of Noodle Soup in the US, we often think of Chicken Noodle soup but there are many different ways to prepare a noodle soup. In this activity, we explore the ways noodle soup is eaten in different regions of the world. This activity should open up a discussion about the similarities and differences of the recipes which all have the common vein of being a noodle soup! (This recipe has been simplified to be kid-friendly.)
Ingredients
Directions

In a large soup pot, heat olive oil. Add garlic and heat it through but do not let it brown. Add Italian seasoning.

Cook pasta according to instructions on the box, then drain it.

Next add the cans of cannellini beans. Do not drain the cans.

Simmer to infuse the flavors. Add the pasta into the sauce. Top with parmesan cheese and enjoy!
