This lovely beef dish has Russian roots. Today we add far more flavor components and use a better beef than our grandmothers but this dish has not lost its creamy texture since the early days of its inception. If made elegantly with tenderloin of beef, make sure not to over-cook the meat. When using stew beef, braise longer before adding the sour cream. When on a budget, substitute ground beef.
