Chico’s Oven Brings Bolillo Back to The Bush

And a South Chicago bakery is firing up its oven again after a 27-year-hiatus.

In Chicago, we've seen many times how the sudden disappearance of big industry can hollow out formerly vibrant communities and make them difficult places for small businesses to thrive. But Southeast Side native Jorge "Chico" Perez says there's plenty of dough to be made in his neighborhood. He's using the bakery his parents closed in 1994 -- and the recipes his father taught him -- to do it.
