>>Do you ever have one of those days where you know you've got a date night and you want to make that perfect little appetizer, but you're also worried about getting lunches ready for the rest of the week?
Do I have a recipe for you.
Today on "Tassie's Table," we're making pimento cheese.
It makes a great appetizer, and, of course, it's lovely for sandwiches.
So, we're gonna start off with eight ounces of softened cream cheese in our bowl and what we wanna do is just kind of push a fork through that to make sure it's broken up a little bit.
Then we want to add 1/4 cup of mayo.
Now, what I like to do is put the mayo in with the cream cheese first, get it mixed through a little bit, and then I know that all of my flavors will be mixing through well.
So, I'm going to start with my flavor compound.
A little bit of cayenne.
Now for me, about 1/4 teaspoon.
You can use less, you can use more, depending on what you like.
And then we'll add just a little bit of salt, about 1/4 teaspoon, and a teaspoon of Worcestershire sauce.
Now, let's just blend that through really, really quickly and easily, and then we're going to look at adding some cheese.
Now, for mine, I like to use pepper jack and sharp cheddar, so let's start with about a cup of sharp cheddar.
I've just hand-grated this so it's all uniform and it's fresh, and we'll add a cup of a pepper jack cheese, so just a little more spice.
This is also where it's important that you adjust your spice the way you like it.
Now, let's just stir that through.
All you want to do is coat those two cheeses with your wonderful cream cheese mixture.
That's it.
It's so super simple.
The next thing we're going to add is that touch of pimento, so some chopped red bell pepper.
And just stir that through.
So, I have this great little container here that I like to use to bake.
It's just a cast iron pan.
It's small, and I'm going to put about half of my cream cheese mixture, my wonderful pimento cheese, right in there, and then the rest, I'll store in a nice little bowl or container in my refrigerator and be ready for lunch the rest of the week.
Now, once you get this into your pan, you want to bake it at 350 degrees for about 20 to 25 minutes, and then I'll show you how to serve it.
So delish.
And now here is our hot pimento cheese right out of the oven, and we're just going to take a little bit of green onion and just sprinkle on the top.
I just sliced that thinly.
Then some crackers.
I've got some veggies here.
Ooh, the pan is hot.
There we go.
Great pimento cheese.
Wonderful appetizer for two and you've got the leftovers for lunch.
