(upbeat music) (upbeat music fades) - Jew Brew at the IJ & Jeanne Wagner Jewish Community Center celebrates the Jewish roots of Oktoberfest, craft brewing and fermentation in the culinary arts.
Here to tell us more is the Community Special Events Coordinator, Barb Dolim.
Hi, Barb.
- Hi, Mary.
- Thanks for being here.
Okay, this one looks like so much fun.
- Agree.
- Okay, but first tell us, really, it started with the Jewish community, the whole Oktoberfest?
- Well, the fermentation dates back in Jewish history, and many of the staples of Jewish food, such as wine and beer and vinegar and pickles and kraut, have biblical roots, Jewish Biblical roots.
- Okay, and so here you are, doing this big fest, but you've got so much planned around it.
- We do.
- Let's talk about that four-course meal.
- So we have a four-course beer-pairing menu.
Each course will be paired with a Melvin or Roadhouse Brewery Beer.
And we have Max Shafer, who is the brewmaster for those breweries, BRMC, telling us about all the beers.
And for dinner, we're serving everything from barbecue brisket, like miso fish tacos, corned beef, and kraut.
We have pumpkin ale donuts and chocolate beer brownies.
So there's a whole range of food that's fermented.
- Fascinating, fascinating.
I know, and then you've got some great entertainment too.
- We do.
We're very lucky.
We have the New Deal Swing Orchestra, which is Tad Calcara's band.
He's the lead saxophonist for the Utah Symphony.
16-piece orchestra, three vocalists.
It should be a great concert.
- It'll be great, and I know earlier in the day, you're doing some fermentation workshops, and yeah.
- Yeah, we have two workshops, one on, like, bacteria, mold, and yeast and how they play a role in fermentation, and then we have one on the evolution of beer.
Like, how does a craft beer come to fruition?
- All right, well, sounds great.
