Rosenberg, who was a Holocaust survivor, helped found the Appalachian Research and Defense Fund, also known as Apple Red, which is based in his adopted hometown of Preston's burg, Kentucky.
Apple Red provides civil legal aid to those who cannot afford a lawyer.
He also founded the Appalachian Citizens Law Center and Whitesburg, Kentucky, to address coal related environmental, health and safety matters.
Rosenberg will receive his honorary degree at UC's commencement ceremony on Friday.
