AT THE TIME, I HAD HEALTH ISSUES AND I REALIZED IT WAS STEMMING FROM FOOD.
>> AT 28, JUSTIN REALIZED HE NEEDED A LIFESTYLE CHANGE.
HE WAS OVERWEIGHT AND TIRED OF BEING TOO TIRED FOR EVERYTHING.
>> I STARTED MAKING A BUNCH OF SALADS FOR LUNCH AND THE STUFF I HAD LEFT OVER THAT I PREPPED WHEN I GOT HOME, I WOULD TOSS INTO SOME NOODLES AND A SAUCE AND THAT WAS MY DINNER.
THE COOL THING WAS THE FOOD IS GOOD.

AFTER TWO YEARS OF BUYING PRODUCE FROM FARMERS MARKETS AND EATING HIS HOMEMADE VEGAN DISHES, HE LOST WEIGHT AND REVERSED HIS NEGATIVE HEALTH ISSUES.
BUT THAT WAS NOT ALL.
HE THOUGHT, WHY NOT TURN THIS INTO A BUSINESS?

DESPITE TAKING A HARD HIT FROM THE PANDEMIC.

THE NONPROFIT BIKE SHOP DONATED THOUSANDS OF BIKES LAST YEAR, BESTING ITS HIGH MARK OF 850 BIKES IN 2019.
NOW, AS THE WORLD SLOWLY BE OPENS, THE NONPROFIT COMMUNITY BIKE SHOP IS COMMITTED TO PUTTING MORE BIKES ON WILMINGTON'S STREETS.
>> WELCOME TO URBAN BIKE PROJECT.
WE ARE A NONPROFIT BIKE SHOP AND OUR GOAL IS TO MAKE BICYCLING ACCESSIBLE FOR PEOPLE WHO MIGHT NOT OTHERWISE BE ABLE TO ACCESS IT.
WE HAVE USED BIKES FOR SALE.
WE ALSO HAVE BIKES FOR FREE THAT WE GIVE TO ADULTS IN NEED OF TRANSPORTATION.

WE HAD NEW RIDERS.
SO MANY HAVE SAID, I HAVE NOT RIDDEN IN 20 YEARS.
WE EXPECT CONTINUED INCREASE IN TRAFFIC AS PEOPLE CONTINUE TO USE BICYCLES.
THEY COME TO UPGRADE A BICYCLE.
AND OF COURSE, SPREAD THE WORD.
THE FACT OF HAVING REACHED SO MANY PEOPLE IN 2020, WE KNOW THAT IT'S GOING TO CREATE SOME RIPPLE EFFECTS WITH PEOPLE FINDING OUT ABOUT US.

A NEW FRENCH RESTAURANT TAKES THE PLACE OF THE HOTEL'S GREEN ROOM.
LET'S TAKE A TOUR AND MEET THE MAN BEHIND IT.
>> THIS IS OUR NEW RESTAURANT AT THE HISTORIC HOTEL.

♪ THIS IS THE OLD GREEN ROOM SPACE.
A RESTAURANT THAT HAS BEEN CONTINUOUSLY OPERATING FOR 110 YEARS NOW AND THIS IS THE FIRST TIME THAT THE RESTAURANT HAS BEEN REIMAGINED.
IT MEANS THE HORSE MEN.
WE LOOK TO THE EQUESTRIAN TRADITION OF THE RIVER VALLE FOR INSPIRATION.
EVEN LOOKING AT OLD PICTURES OF THE HOTEL BEFORE THE AUTOMOBILE BECAME UBIQUITOUS, PEOPLE WERE HAVING HORSES OUT FRONT.
WHEN WE CAME INTO THE SPACE AND STARTED LOOKING AT WHAT WE COULD DO IN HERE, TO US, IT MADE SENSE TO CREATE A FRENCH RESTAURANT, ESPECIALLY THE CONCEPT, THERE IS A CASUAL VIBE.
FIND FOOD THAT WAS A LITTLE MORE APPROACHABLE FOR THE COMMUNITY.
♪ MOROCCAN STYLE CUISINE, THE IDEA IS TO INFUSE THE FLAVORS AND AROMATICS INTO THAT CHICKEN.
JUST TRYING TO EXPLORE THIS OTHER PART OF THE WORLD THAT THE FRENCH TRADITION HAS TOUCHED IN ONE WAY OR ANOTHER.
THAT IS A GREAT EXAMPLE OF WHERE WE ARE LOOKING OUTSIDE OF FRANCE TO BUILD THE MENU.
THERE WERE A LOT OF EXPECTATIONS, OBVIOUSLY.
I HAD GREAT PARTNERS IN THE HOTEL GROUP AND A GROUP WHICH OWNS THE BUILDING AND I THINK WE ALL APPROACHED THE PROJECT THINKING OF OURSELVES AS MUCH AS CUSTODIANS OF THE SPACE AS THE RE-INVENTORS OF THE SPACE.
WE REPLACED THE FAKE CANDLELIGHT BULBS WITH THE SCHOOL GLOBES.
THE VELVET REMINDED US OF 1960'S, 1970'S SORT OF NEW WAVE FRENCH CULTURE.
THERE WAS NEVER A BAR IN THE GREEN ROOM.
♪ WE THOUGHT THAT AESTHETICALLY, WE NEEDED A CENTERPIECE AND THE BAR WOULD SPEND IN A OLD NEW YORK DINING ROOM FOR 100 YEARS.
IN THE MIDDLE OF THE 20TH CENTURY, THE DU PONT COMPANY PUT DOWN WALL-TO-WALL CARPETING AND THERE WERE RUMORS THAT WHILE THERE HAD BEEN THIS, BEFORE PUTTING DOWN THAT CARPET, THEY HAD LEVELED THE FLOOR WITH A LAYER OF CONCRETE, SO WE WENT INTO THE FIRST DAY OF DEMOLITION NOT KNOWING WHAT WE WERE GOING TO FIND.
WE PULLED THE CARPET UP AND FOUND A PRICELESS FLOOR.
♪ WE WANT PEOPLE TO FEEL INSPIRED WHEN THEY WALK IN AND TO SEE IMMEDIATELY HOW MUCH CARE AND THOUGHT WAS GIVEN TO THIS RESTAURANT BECAUSE NONE OF US TOOK IT LATELY.
WE ARE HERE TO PUT A NEW STAMP ON IT, MAKE PEOPLE HAPPY, MAYBE MAKE SOME MEMORIES.
