>>Power bowls are all the rage, and I love a good power bowl.
Something with a nice whole grain, maybe some lettuce, a little fruit, a little bean, a little vegetable.
So today on "Tassie's Table," we're gonna make a simple power bowl.
We're gonna start off with a little bit of lettuce right here in our bowl.
Now, power bowls should be able to be eaten with a fork or with your vessels that you put in.
So I'm using my lettuce and some chips as my vessels.
I might still eat it with a fork, but I like to have all of those things as options.
So we're gonna put in some chips.
These are just little pita chips.
You can use a wrap if you'd like, and just drop those in.
Now I'm putting those on the back, simply so they don't get all the wetness from the vegetables and the beans.
Now let's put in some black beans.
And black beans are very nutritious, very good for you.
So we want to put in a little bit of black bean there.
Ah, this is gonna be a great bowl.
And I have some avocado.
So let's throw in some fresh avocado that we just minced up, just nicely chopped in really good sizes.
There we go.
Just a little bit of that avocado.
Power bowls are really very nutritious and delicious, and you can put in a lot of different things.
If you love avocado, load it up with avocado.
I'm definitely an avocado gal.
I love avocados, and I love beans.
Now let's take a little bit of salsa.
And I have a mango salsa here.
I like to make my own mango salsa, but mangoes just were not very good this week.
So I decided to buy some already-prepared mango salsa, and I just wanna put it in.
First of all, I want you to look at how bright and cheery everything is there.
It's just so delicious.
And then we're gonna take a little bit of a lime wedge.
Let's put a couple of lime wedges in there so that we can just squeeze that on as juice.
But the other thing I want to do is put on a little bit of lime vinaigrette.
Now your recipe will have the recipe for the vinegarette, and it's so easy to make.
But you can also buy the vinegarette at the store.
So any kind of vinegarette will work.
Now I just want to drizzle over my quinoa, a little bit over the beans, the avocado.
Just trying to keep those chips nice and dry.
Now, who wouldn't want this for breakfast, lunch, or dinner?
What a great power bowl.
And it's so simple to just put together.
