(soft music) >>Are you looking for a great seafood pasta that doesn't break the bank that you might like to have for a date night?
Well, I've got a great recipe today.
So on Tassie's Table, we'll be making creamy lemon lobster pasta.
It's wonderful, it serves two, and it's perfect for date night.
So we're gonna start with a nice warm pan, and I'm going to add to that about a tablespoon to a tablespoon and a half of olive oil.
And then I want to add one chopped shallot.
This is a medium shallot, (pan sizzling) and I just want to quickly cook it so that it gets nice and translucent, but not so that it turns brown.
Let's just give it a good stir.
And you can see it's already starting to turn translucent, very quick.
Now, let's add one clove of garlic.
This is a large clove of garlic.
If you're buying garlic in the jar, that would be about a teaspoon.
All right, let's just give that a nice stir.
To that, we're going to add a little bit of lemon zest.
Now, this is fresh lemon zest from about half of a lemon, and then I want to add about a tablespoon to a tablespoon and a half of fresh lemon juice (pan sizzling) and about a half cup of heavy whipping cream.
And stir the whole time you put this in, because what happens is the acid from that lemon is going to quickly turn this cream to a nice, thick, creamy sauce just like that.
You can see it all happening.
It's already starting to simmer, and all of my cream is starting to coat the back of my spatula.
Now let's just bring that to a simmer, and then we're going to add some cheese and butter.
Now we've got a little simmer going right here.
You see the bubbles starting to form.
Now I want to add about a tablespoon of butter, and this will just add a richness to this sauce.
It's just wonderful.
And then we're going to add about three tablespoons of a fresh Parmesan cheese that's been grated.
Now, make sure that you use Parmesan cheese that is freshly grated and not what you buy in the store that's grated and put in a bag.
It just does not melt well, and it's coated with a wood product, so it's really not as healthy for you as you might think.
All right, so we've got that going.
Now I wanna add just a little bit of fresh basil and some lobster.
Now, this is one tail of a small lobster, so it's not gonna break the bank, but it does give you great flavor in this dish.
There we go.
Let's just stir that through.
What you're doing is just basically heating through that lobster.
And then we're going to take some pasta, and I have some fettuccine that I cooked yesterday, and then I tossed it in a little olive oil and I put it on a sheet pan to just cool.
And I'm putting in about six ounces cooked.
There we go.
Let's coat all of that pasta.
Just toss it around.
Oh, this is so wonderful, so delicious, creamy.
It's got that zesty flavor of the lemon, and of course, that wonderful flavor from both the basil and the lobster.
Now, let's just pour that beautiful lobster pasta into the bowl.
It's so creamy and rich, it's just beautiful.
Now you want to make sure you really scrape out all of that great cream sauce so you get all that flavor.
Then let's top it off with just a little basil, and how about a wedge of lemon?
This looks so good and it smells absolutely delicious.
