And it's not even Tuesday.
Is it Tuesday?
Anyway, whatever day this is, it's always taco day at my house.
So I'm going to teach you how to make these gorgeous steak and melting cheese tacos.
So we marinated our churrasco steak, which is skirt steak, one of my favorites for tacos.
And this is marinating in some fresh squeezed orange a little bit of chipotle, just the adobo from the can of chipotles, a little bit of cumin and coriander and some brown sugar just to kind of soften the blow a little bit from the Chipotle.
I'm going to turn on my griddle, which we're calling a plancha today.
And this is a great griddle.
It's cast iron.
And I just put it over my burners.
And it works really well.
Okay.
At the same time we're going to be melting some cheese on our tortillas.
Let's just put everything on the griddle.
So I'll start with the meat.
I love a little bit of onion cooked into my meat, so I'm just going to slice a little julienne of some red onion.
Not too crazy thin because I want it to cook along with the meat.
We're going to start melting the cheese on the tortillas.
I have some grated mozzarella cheese here.
You can use whatever cheese you like.
You can use that grated Mexican style cheeses that good blend um jack cheese, cheddar cheese, whatever it is that you like always corn tortillas for these kinds of tacos, as far as I'm concerned.
But if you like flour better, you make your taco the way you like it.
I'll add some cheese right in the center.
Let's go ahead and season our meat with a little bit of salt, because I forgot about that.
And let's start moving the meat around.
I'm going to place my cheesy tortilla into my taco holder like so.
Getting ready for the meat.
As far as I'm concerned, this meat is almost fully cooked.
Top off your tortillas with your gorgeous marinated meat.
Now, if you're not into marinating your meat, then you can just do plain seared steak or grilled steak on them.
Take a little bit of fresh cilantro.
And top your tacos with some fresh cilantro.
You've got your salsas on the side, your sour cream on the side, and I think we are absolutely ready for taco night.
