Welcome to Cooking with Brontez.
This is a very special episode because it's our Thanksgiving episode.
And I am here with a woman I love very, very, very much.
Ms. Juanita More, 'the Empress of San Francisco'.
(laughing) - A title?
- Yes!
So many accolades.
Just mother of a mom, looked up to this lady for a lot of years.
I'm very, very, very honored.
- Thank you dear.
- That she wanted to show me a very, very awesome and quick Thanksgiving recipe for us.
- Hi, everybody.
Welcome to my tiny tenderloin kitchen.
I'm Juanita More.
I was thinking about Brontez cooking and I actually couldn't imagine him actually cooking.
So I thought I would come up with some really simple, easy ideas to do at home.
- Yes!
- Make it easy.
- Yes!
- So, the first thing we're going to do is make a cocktail.
We're going to make a Cranberry Paloma, and then we're going to make a Cranberry Paloma, one that has no alcohol in it for you.
- Yeah.
- Does that sound good?
So, one for both, how's that?
- I'm in recovery.
(laughing) - So, the things that you're going to need are some Cranberry juice, some Tequila, some grapefruits, some limes.
So I'm going to do a shot of Tequila, for the one with Tequila.
- Yes.
- I know it's going to be good.
Now I'm going to have you pour half of this into this one and half into that one.
- [Brontez] Yeah.
- [Juanita] The grapefruit juice that we just squeezed.
- We're eyeballing it.
- Yep, we're eyeballing it.
- That looks good.
- That looks good.
And we'‘re going to put some ice in both of those.
- Yeah.
- Cranberry, and some cranberry here.
And on this one, we're going to top it with a little sparkling soda.
- [Brontez] Cool.
- You know what?
Put a little sparkling on mine too.
We both might as well be sparkling.
- Let's sparkle.
(laughs) - Oh my god, it matches your like everything!
- It's matching everything.
I have this whole color scheme!
- Okay.
- [Juanita] All right.
Stir them up.
(upbeat rock music) There you go.
They look good.
- They do.
- Cheers, Happy Thanksgiving.
- There you go.
The limes are in here?
- Oh!
(beep) (laughing) - You know what?
You better squeeze the lime in there.
(both laughing) Oh my goodness, and I forgot to put a little salt.
So we're going to also add this pinch of salt.
(Juanita mumbling) - [Brontez] Salt, add that together.
Yeah.
Oh, okay.
Push through salt real!
- See?
- Okay!
- Might as well.
- Yeah.
- There we go.
Now.
- We're ready to party.
- Cheers, Happy Thanksgiving.
- Happy Thanksgiving!
Hydrated and ready to cook.
- Exactly.
It's the perfect start to getting this dinner together.
- Yeah, sure is.
- Here we go.
So we're going to make a Turkey club sandwich and we're going to make it in the idea of using leftovers.
So we're going to start off with a box of stove-top stuffing mix.
So easy to make.
You just got to add your water, some butter, heat it up on the stove and let it sit.
But what I do is I let it sit inside of a little pan.
- [Brontez] Ahh!
- [Juanita] So it's all ready to go.
First, we're going to make the cranberry mayo.
So I'm gonna have you do a big scoop of that.
- [Brontez] I'll do a big scoop of this.
- A nice big scoop of this.
- [Brontez] There you go.
- [Juanita] And I'll have you mix those together.
(clanging spoon mixing) - Oh, man I love cranberry.
- I love cranberry too.
(mixing sound continues) - [Juanita] So, we're going to have some bacon.
Going to put that on the grill over the heat for a little bit.
- Oh nice.
- Oh yeah.
- [Juanita] And we're going to use ground turkey and make a Turkey burger.
- 'Cause it's Thanksgiving.
- 'Cause it's Thanksgiving!
You want the gobble-gobble.
- I would like to say that no turkeys were harmed in the making of this burger, but it's just not true.
Um...
Sorry.
- Yeah, let's not, let's not go there.
- Let's not go there.
Oh, that's a sizzle.
- That's a sizzle.
- [Brontez] That's a sizzle.
- [Ms Juanita] Alright, I'm going to let that sizzle.
Right behind you I got salt and pepper.
- Okay, cool.
- Put that on that Turkey burger.
Okay.
I want you to tell me of like one of your favorite Thanksgiving meals.
who makes that for you?
- Um... Popeyes.
- Yeah?
(Both laughing) - [Brontez] I, well, I'm from Alabama And so everyone just has this idea of me growing with little illustrious pies and cobblers and all that.
- Sure!
- But my grandma had 10 kids and it was like, she was cooking for an army.
And so the meal was very - Simple?
- It was like simple.
It was like simple and like kind of to the point.
It wasn't 'til I got to California that I had these exquisite-like kinds of Thanksgiving meals.
- [Juanita] I'm going to add a little bit of butter over there.
- Okay.
- Maybe a little bit for the stuffing.
- Okay.
(both muttering) - I love the smell of butter.
- [Ms Juanita] We've got our bread.
It's got a little butter on it.
We can toast it for a second.
- I cooked as a little kid.
I was literally on a stool next to my dad, watching him cook.
And when we would go over to Grandma's house.
I was in the kitchen.
My cousins, my aunts, and uncles and everybody would say, 'Go outside and play.'
I was like, 'No I want to be in the kitchen.'
I was in the kitchen.
- Oh wow.
- Just being in the kitchen.
Yeah.
- [Brontez] Oh yeah.
(chattering) - [Brontez] I think this is brown.
- [Ms Juanita] All right.
- [Brontez] Let me put them over here.
- [Ms Juanita] That looks great.
And flip that turkey.
- [Brontez] Ah!
Oh yeah.
- [Ms Juanita] Looks incredible.
Flip that onto the other side.
Oh!
- [Brontez] She's doing it.
- [Juanita] Anything else you want to add?
You want to add some tomato?
- Um...
I think I'll have a tomato.
- Alright, quick.
So, what I'd like you to do next is smear some of that lovely mayo cranberry that we made on both sides.
- [Brontez] I love cranberry Mayo.
It never occurred to me that I could make it all year.
This feels kind of extravagant in July, but when have I ever feared being extravagant?
- Oh, remember that time I put you in Drag.
- Oh, I remember the time you put me in drag Yes.
It was very extravagant.
- [Ms Juanita] You were extravagant.
That performance that night.
No one has topped that.
No one has crawled completely around the entire bar, hanging from the ceiling.
But, it's what you did.
Next, we're going to put this burger here on the bottom to start.
- [Brontez] It's still sizzling.
- [Juanita] Still sizzling.
Now I'm going to add a couple of tomatoes right here.
I'm going to add just a pinch of salt.
There we go.
Now we're going to add that stuffing on top.
- Oh wow.
I am happy y'all!
- [Juanita] Oh, good.
This is gonna be huge.
Now we're going to add some bacon up in there.
- [Brontez] Cool.
- I don't know how we're going to eat this, but we're gonna try.
- We'll figure!
- Okay.
That sounds good.
And now a little bit of Arugula.
Oh my goodness!
You ever seen anything Prettier?
- Never.
Never.
- I'm going to try to cut into this.
So let's wish me luck.
Cause we'll see what comes towering down.
Oh my God.
I think I did it.
- [Brontez] You did it.
Yes!
- Alright.
You want to grab that end?
- Yeah, I'm going to grab this end.
Oh!
I love it!
I love it.
I love you so much.
- I love you too.
Oh my god.
- Yeah!
Oh my god.
My mom puts stuffing on burgers all the time.
- Oh man, that is so good.
- This is so good.
(chuckling) - I can have this, right?
- You can.
Oh we're - you're eating that.
- You're going to love this, you guys.
You're going to love this.
Do this everyday.
Actually.
Don't just wait 'til Thanksgiving.
Treat yourself!
Treat yourself.
It's so good.
- Let's finish this and then make dessert.
Alright.
So we're going to make a pumpkin dump cake.
- That's a...?
(laughing) - You want to open that?
- Because what we're going to do is just dump everything in there.
How's that?
- Okay, yeah.
I've been in those situations.
- We're going to jazz it up.
- Okay.
There we go.
- We're going to gas it up.
So we're going to add a couple extra things to it.
That's really, really going to make it really good.
So I've got three eggs, which we're also gonna add, dump those in there.
I've got a half a cup of vegetable oil.
We're going to dump in there.
- It's taken me a long time to... - You got it though.
- I'm 40.
And I still can't cook.
- And we're going to get all that pumpkin out of there and dump that in there as well.
- [Brontez] Yes!
- It sort of smells good.
- It smells amazing.
Yes.
I'm into it.
There we go.
I got it all out.
- There you go.
Okay.
Now you are just going to mix all that together - [Brontez] Mix this fiercely, because I am a man.
(chuckling) - That's looking good.
So I got our cake pan and I am going to just spray it.
You could also butter it all over the bowl.
This is also my great grandmother's bowl from the thirties.
- Oh my God.
- I know it is so precious to me.
Isn't it so sweet?
- Yes.
- So we just want to even it out.
And, - we're going to put that in the oven and we're going to bake it for about 45 to 50 minutes until it comes out clean and that's it.
- Cool.
- Fabulous - All right.
So we've got the cake out of the oven.
It's cooled.
It looks gorgeous.
And we're going to flip it out of this pan, and put it on my cake plate.
- [Juanita] Oh, that looks good already.
- [Brontez] Oh, yeah.
- Oh yeah.
That looks great.
We're going to drizzle it with this first which is our caramel sauce.
- [Brontez] Can you do it that French way where its like... - You can.
- ... the lines and angles all that?
- Why don't you?
- Okay, you know what?
- [Ms Juanita] That is so pretty.
- [Brontez] I feel like the makeup girl in Sephora.
(both laughing) - [Juanita] Oh my god.
It's so beautiful.
- [Brontez] There we go.
- [Ms Juanita] Now, sprinkle a little bit nuts.
And then we'll put some whipped cream on top.
- [Brontez] I'm not that impressed.
- [Juanita] After the turkey!
- Okay.
Um... cool.
And then... - [Juanita] Oh yeah!
That is it!
- [Brontez] Oh, cool!
- Shall we try it?
- Yeah, totally.
- Alright.
- Also, thank you for giving.
- Yeah, you're welcome.
You're so welcome.
(laughter) - Here we go.
And then I'll get a little bit of that too.
- Oh Yeah.
- Yeah.
- And that was so easy.
- Oh yeah.
- Totally, if you're alone on thanksgiving and hiding from the world, just get you a dumb cake.
Feel like you did somethin'.
- Thanks for having me.
- I love you so much.
- I love you too.
- It was fun.
(laughing and chattering) - And thanks for being in my kitchen.
- Oh, I love this place.
Yeah, I'm still chewing with my mouth full.
