In Chapter 2, Calvin Trillin has created a demand, Arthur Bryant's has put it on the menu, but with more and more people coming in to eat this food wonder of the world, the supply just couldn't keep up. Kansas City is known for its legendary barbecue, but there is a smoke cloud of mystery surrounding its most iconic menu item: burnt ends.
