And I'm so excited that you are joining us tonight for Christmas on Main Street.
This program is sure to get you into the holiday spirit as we listen to some new songs, along with some old classics.
We will also have a visit from Miss Caceys where they will teach us how to make a beautiful wreath.
And then Craig Stoker will be sharing one of his favorite appetizer recipes.

[Applause] - There is something absolutely magical about the holidays and one thing so many love to do is, of course, decorate.
And we are joined with no other than Liz Carter with Miss Cayces Christmas store, here to teach us a little bit about holiday wreath making.
Right, Liz?
>>Liz>> That's correct.
- Now, Liz, before we dive into making, I have to ask, what is it like working at a holiday, the best Christmas decor store in West Texas?
I would say Texas.
- I agree.
Um, you know what, it's so fun.
Every day is just, um it's hard to come to work and not feel happy and excited.
Um, and, you know, just to see the customers faces when they walk in the door and, um just how magical the whole experience is.
It's it's great.
You can't have a bad day at Miss Cayce's.
- You can't.
You are spreading Christmas cheer.
Holiday cheer.
Not just during the holidays, but truly year round.
So to help us deck our halls, our doors, uh today and this holiday season, this is going to walk us through wreath making, right?
- Yes.
- Okay, so break it down.
What are the basics that we have here?
- So this is just a 30 inch Belgium.
You know, your kind of typical Christmas wreath that you think of.
Um, I'm going to be incorporating some different items in it to jazz it up.
And this one is not lit.
But you can get them lit to where, um either battery operated or they plug it in so they can be on your door or your gates anywhere in your house.
- And so is this more, would you say indoor outdoor or could this go either way?
- This could go either way.
Um, this Belgium mix is great for outdoors.
Um and so it will sustain the wind and the dust and all of that.
So, um very, heavy duty.
- West Texas tried and shoot, right?
- Yes.
- Okay.
So you start with your base and then is this the first step that we weave in?
- Yes.
So this is just to add some different texture and color.
Um this is our Norfolk, a version of the Norfolk that we have.
It's a kind of a lighter sage green.
Um, I thought it would help add kind of a pop of color in it.
And so what you do if you want to add just a little bit of pizzazz to your wreath, um you are going to weave this in, so you kind of just start.
I always try to like I try to start, um think of it as a clock.
- Okay - So either on the 12 or the three or the six or the nine.
And so it doesn't really matter where you start, but you're just going to push it down in and then use the wreath, the Belgium mix to kind of hold it secure.
- Okay.
- You don't really need zip ties You could use zip ties if you wanted to.
Um and so we'll just push it down in - Okay.
Push it down in.
Do you trust me to do the, - Absolutely.
- weaving here - So we get after it.
Okay.
And then you just kind of pull the, um needles through to hold it in place, - Okay and then we'll go back through and fluff.
This the uh Belgium wreath was already fluff.
- Okay - Which is a very important step.
So you don't want to forget the fluffing.
- And you want to wrap this around here to make it secure, right?
- Yes.
So you're just going to push it kind of as far down as you can go.
So you don't want to see that, the stem of it.
So you're going to just push it down.
- Okay.
- Find one of the other needles and wrap it around so it's secure and kind of just, - Push, yeah.
- and there's really not - Wrap - So push down.
- Okay.
- And then and you kind of you can get tough with it because it is very durable.
- I mean this green is beautiful.
- Yes.
So I thought this green would add, um just like I said a little brightness to it.
- Yeah.
And the texture I like the I mean, this is a really soft texture.
- Yeah.
So our Norfolk is our biggest seller and last year we sold out.
So we ordered a ton this year.
And we have still got a lot in stock that it is going fast.
Um and it's just it feels good.
It feels real.
It looks real.
It's just it's a great invention.
Whoever did Norfolk is a genius.
- It is beautiful.
And this process works regardless of the size of wreath you were saying, right?
Like small or large, - Right - the processes the same.
- Yes You can do this with anything.
You can also do it with Garland.
Um, you can do it in your tree.
We've been adding Norfolk to a lot of our trees that we have in the store, just because, again, it adds just that different texture to it, and it really does make a difference.
So then you kind of just leave it in kind of, you know, space it out, um.
- And the next step we have this what do we do next?
- Okay.
So the next is a this is just a four foot ball Garland.
It's one of our smaller ones.
Multicolor.
Again, you can leave this out and just add some balls or, and all of these steps are just added bonuses.
You can either take them or leave them out.
So we're going to do the same thing with this.
- Okay.
- Just - Kind of kind of clockwise or counterclockwise whatever speaks to you.
- Yes.
And I always yes, just find that spot to kind of bury it down in there.
- Okay.
- And then pull one of the needles from that Belgium wreathe.
- Okay.
It's going to, it's going to hold better and more secure than the Norfolk.
And so you just kind of keep going around to where you feel like it's in a secure place and to where you don't see the, the brown of the, - Okay - Garland.
And it just takes honestly, it's just a lot of fluffing.
[Laughter] A lot of fluffing.
- You have a little more of the magic stuff - Yes - when it touch, when it comes to fluffing, I don't.
- Well.
- I'm not sure I have that quite yet.
I need some more work.
- You just bury it and fluff it.
Bury it, secure it and fluff it.
That's kind of the big steps with doing a wreath.
- Okay.
- Okay.
So now that you have that in there so you can see it's already changing looks, it went from kind of boring just simple green wreath to a pop.
- Absolutely.
We're going to take it up one more step.
- Yes.
We're going to add even a little bit more.
These are just our four inch balls.
We have them in so many different colors.
You can do whatever.
You know, there's a lot of fun colors in this ball Garland.
So you can choose what goes with it.
I just chose basic Christmas.
- Okay.
- Red, green and gold.
And all I did was these come with wire and you just have to secure them together.
- Okay.
- Make yourself a little cluster And we've just found that this look is kind of, you know, coming around, I guess using it on more and so with this, you can either do kind of, you know, I would do three, probably three, six and nine - Okay.
on the wreath - I like this clock theme.
- Yes!
- I can remember that.
- One of my fabulous designers, was, you know, kind of helping me talk through it, and she said that I was like, yes, that's great.
I mean, it makes so much sense.
When you're doing wreaths.
- And you're just twisting this on the bed - Your just twisting it in.
Yes.
On that secure.
Okay.
Belgium.
And then once we get it finished, we can kind of mess around.
All right.
- You're going to do the honors of the third.
- Yes.
So this will do - Okay.
In a good spot in here I'm going to secure it to the handle of that Norfolk because that'll keep it really tight in there.
And you just need to push it down in.
- This is looking fantastic.
- Yeah.
It um just you know, it's got great texture, great colors.
It'll pop on your door, it'll pop anywhere in your house.
And like I said, you can, you know, you may not like the multicolor.
You can do it all white or all blue.
Um, we've seen all green.
It's a beautiful look.
Um, you could even go back in and add some magnolia or some different types of, um textures.
- This is looking absolutely beautiful.
I love the vibrant colors.
I love the different shapes and textures.
- Yes - So the final.
The final touch is our fabulous ribbon.
If you know anything about Miss Cayces you know that we have great ribbon.
- Yes, the best.
- The best, and so this is just, I used four different styles of ribbon, all different widths.
Um and then we will just find a spot for it.
I'm going to put it right up here.
- Okay.
Push twist.
- Push, twist.
Yes.
Fluff.
[Laughter] So we'll just secure that in there.
- Okay - And again once you get it finished um you can kind of move stuff around.
And so you see, um how it went from just a green wreath to a fun, colorful, piece of decor and, oh, always go back in and, - so, beautiful - just mess with it until you get it how you want it.
That's kind of the trick is just to keep playing with it.
- Liz, this looks fabulous.
So beautiful for Christmas, for the holidays, so bright and vibrant.

The holidays are often synonymous with delicious food.
And I'm so happy that my friend Craig Stoker is here with us today.
Executive Director of Meals on Wheels of Odessa and Odessa City Councilman.
- Yes.

- Absolutely.
I'm happy to be here.
- Not only are you a public servant, Mr.
Odessa, a nonprofit leader, you are also a chef extraordinaire.
- Well, you know, it's not my first time to be here whipping up, something delicious.
So happy to be back.
- What are we whipping up today?
- Well, you know, had some friends bring a crack pie from the milk bar.
Which is delicious.
If you've been watching MasterChef - Yes - or any of that.
So we're going to call this kind of the cranberry crack dip.
One of my favorite restaurants in Austin has a whipped feta.
This adds a little, cranberry, a little honey, a little pistachios, a little sweet, little savory a whip it up real quick in the blender.
So just a quick throw together when you got company coming over.
Help you use some of those leftovers.
Uh, I don't know about you, but, we kind of repeat Thanksgiving menu.
- Exactly waste not want not.
I like it and quick and easy is my kind of style.
So, - But you know, - I like that - my favorite, Barefoot Contessa Ina Garten, store bought is fine.
So a lot of this stuff.
- Chef Craig Stoker, I'm telling you.
- Store boughts fine.
- Alright - picked up all this stuff last night.
Easy deal.
Throw it all in the food processor.
A couple of taps.
Ready to go.
- Ready to go.
All right, so walk us through.
What are we going to do first?
- Well, first.
So again on the top we're going to have a little pistachio - Okay drizzle I guess I don't know - A little green and red going o - Nuts on there, exactly!
But we are ultimately serving it on crackers.
I've got some pita chips here.
- Okay - So I did think a little, chop on the nuts first.
- Okay.
You can do that with your your big chef knife.
- Nah throw it in - Since we're doing all this, we're going to do this.
All right?
I don't know, they offered to mic up the food processor.
We'll see.
[grind] - Unnecessary, - Unnecessary.
[Laughter] - But a couple little taps on that.
- Okay - Now, - What kind of consistency are we looking for here with, you know.
You just a littlw - Whatever.
You feel up to it.
Whatever you feel like.
Really.
- Okay.
- Powdered up.
We're going to get them there in that little plate - Okay.
- Put them back in the bowl where they came from.
But who cares.
Just make a mess.
That's the fun part of it.
- Exactly.
- My kitchen.
If I don't use every dish and have every cabinet open by the end of it.
- Then you're not cooking.
- Did you really cook anything?
I don't think so.
- No no I'm not much of a cook.
I'm a good eater, though.
- There you go.
Well, you know - It takes two.
- We'll get together on that.
Now next, uh so this recipe called for feta cheese in brine.
- Okay - Now, I could not find that.
Okay, but blocked feta cheese is going to be your go to.
It's going to be better than the crumbles because we're we're whipping it into a consistency that's, you know, really kind of spreadable.
- Okay - So I did find a block.
They wanted it in brine.
Now if you can find that great.
If not olive oil.
So whatever you're going to make for your salad dressings - Okay - with little brine in there, but it's not going to be enough to make it creamy like we want.
Yeah.
If you've got a little Greek yogurt, you can throw that in there.
So eight ounces of the feta - Okay - and then we've got four ounces of cream cheese.
- Cream cheese.
- We're just going to throw that in there too.
In order to give it a little of that consistency, we need - Okay - some of the moisture in there.
- So how much olive oil?
- You know, again, until your heart sings.
And, what is this, Italian?
- La la la la.
[Laughter] - Is there an Italian, Christmas carol?
I don't know, - Uh, not that I can think.
But we can do la la la.
- I think again start.
- Okay - You can always add more.
You can.
- Thats true.
You cant take away.
That is very, - So uh you know, we get into conversations about cooking versus baking.
You know, baking.
I'm not good at baking because that's science.
- Baking is chemistry.
Cooking is art.
- Right, cooking.
You know, your ancestors will whisper to you, you know, enough, enough, my child.
So with this, I start with the little, - Okay see where you get.
You can always add more, but you can't take it away.
So.
- All right lets hear What are your ancestors saying?
[Blending] See what happens with this?
- Okay.
- Little bits.
Scrape your bits down in there and you want the cheese to really be spreadable.
- Mm-hmm, a whipped.
- A really whipped consistency.
All right.
I think the ancestor said enough, - Enough.
Craig.
blender is done, food processor is done.
- Okay - And so I just brought wherever you're going to serve this if you're having some company over.
I just had a nice little dish.
Um I'm.
- Your mom is so proud.
This looks beautiful.
- She dragged it out and washed it right in front of me, so it's ready to go.
[Laughs] But we're going to do this, is.
- I'll hold this.
Perfect in a beautiful little dish that you can set out on your table.
So we'll start there, get that kind of lined up.
- Okay.
- And then again with your cranberry sauce.
So, - Okay.
-put that right over right over the top there.
You can start with that.
- Okay.
That's I'll be on cleanup.
- You can do that.
- There you go.
- Serving spoon there.
- Okay, sprinkle on top - Just on top.
And you know again just kind of what you like.
- Whatever your heart desires.
- All right, next - Okay.
Honey, - Honey.
Is this our final step - I love, well, na - I love honey.
- We'll see - I love a little honey and honey with cheese.
- a lot.
- We, you know, we found a goat cheese appetizer from our friends in Coleman at a great little restaurant.
You do goat cheese and hot honey.
- Oh.
- It's amazing.
Delicious - Little honey on top.
Probably a little more.
But, if you've ever watched.
And I cannot remember her name, but she had a great series called salt, fat, acid heat.
- Ooh.
If you want to learn about cooking, it's - Okay.
- Looks, I know that, but she talks about acid and how important it is to have that to really brighten the flavors and bring it out.
- Okay.
- And so this dish, again, you you have some really good flavors, but you can really intensify them, a little zest.
- Okay.
- Go a long way.
And so if you have one of these little nifty zesters, you can just come in here.
If you know about zesting, don't ever go too deep because that's bitter, - Mmmm - but you get your zest in there with that on the top.
Yeah, you'll be able to smell it.
- Smell it.
- And then just for a little holiday flair - Okay - like orange zest -Oh - and again, never too deep - Add a little sweetness.
Acid Sweet - sweetness.
Oh yeah.
Smell that too.
- Mmmm - Again.
To your heart's content.
There's not really a wrong way to do this.
- This is my kind of recipe.
So that's what we're here - Okay end up with.
Again, not a michelin starred chef here, so.
- Don't sell yourself.
short - Beauty You know, this is one of those easy ones that whipped feta comes together quickly.
You got folks coming over.
- Mm-hmm - This is an easy one to grab in the afternoon.
One tip do let everything kind of sit out and soften - Okay - before you throw it in there.
- So that's the pro tip.
- Pro tip, let it soften.
Otherwise it's going to stay kind of chunky.
And the cream cheese you can get that whipped body.
- Mm-hmm - So easy deal to come together.
All right.
You ready to dive in?
- Let's see.
Let's see how we did.
- Moment of truth.
- All right, let's see.
That came out pretty good.
That orange really comes out on the top.
Especially with those pistachios.
- That definitely kicked it up a notch.
It's not overpowering, but it's so perfect.
Just adds, final flavor.
- That is perfect.
Whatever flavors you like, put it in.
If you enjoy it, put it in there.
Your guests will enjoy it as long as you're you know, I always think cooking with love.
- Yes.
- That shows through as long as you're having fun.
That's what the holidays are all about.

[Music] Frosty the snowman hes a jolly, happy soul with a corncob pipe and A button nose and two eyes made out of coal, Frosty the Snowman.
Hes a fairytale they say He was made a snow but the children know how we came to life one day.
There must of been some magic in that old silk hat they found.
For when they placed it on his head, he began to dance around.
Oh, Frosty the Snowman He's alive as he could be.
and the children say he could laugh and play just the same as you and me.
Frosty the Snowman made the sun was hot that day, so he said “Lets run and well have some f now before I melt away”.
Down to the village with the broomstick in his hand.
Running here and there all around the square.
