WE JUST DIDN'T HAVE ENOUGH WIND TO FLY THE KITE.
SO WE SWITCHED AND STARTED TROLLING AND CAUGHT SOME DOLPHIN.
AND RIGHT TOWARD THE END OF THE TRIP, WE HAD A SURPRISE THAT I'LL LET YOU WAIT AND SEE.
BUT ANYTIME YOU GO OUT IN THE GULF STREAM, YOU JUST NEVER KNOW WHAT'S GONNA HAPPEN.
AND YOU GOT TO BE PREPARED FOR IT, AND WE WERE.

TOOK RIGHT OFF, BUT WE JUST COULDN'T MAKE THE PLAY, WHICH, YOU KNOW, THAT'S WHY THEY CALL IT FISHING.

WHY DON'T YOU TELL US A LITTLE BIT ABOUT THE EQUIPMENT WE WERE USING TODAY?

WE GOT SOME DEDICATED KITE POLES WITH SPIDER LINE ON 'EM.

WE WERE FLYING WHAT WE CALL "YUMMIES."
THEY'RE JUST FLYING FISH LOOK-A-LIKES, SO THEY KIND OF SKIP ACROSS THE TOP OF THE WATER.

- IMITATING A FLYING FISH, BUT LIKE YOU SAID, WE DIDN'T HAVE QUITE THE WIND TO GET THE KITE UP AND GOING GOOD.
THEN WE SWITCHED OVER AND STARTED PULLING A FEW DEEP BAITS FOR THE DOLPHINS.
HAD A COUPLE WIND-ONS ONES OUT FOR THE YELLOWFINS IF THEY DID DECIDE TO BITE.
- THIS IS JUST A SMALLER BALLYHOO?
NO SKIRT?
DINK BAIT, HUH?
- NAKED BAIT.
A COUPLE-- - I BELIEVE THAT'S WHAT WE CAUGHT THE BIGGEST DOLPHIN ON, WASN'T IT?
MAYBE 20-POUNDER?
- YEP, THAT'S RIGHT.
USE THE WIRE FOR--YOU CAN CATCH ANYTHING ON THE WIRE, BUT THEY'RE MAINLY FOR WAHOOS.

GOT IT RIGGED UP FOR YELLOWFINS MAINLY WITH A-- ABOUT A 30-FOOT WIND ON LEADER.
THIS RIGHT HERE IS A BIG BOY, WHICH-- WE HAD THE BLUE ONE ON FOR A LITTLE WHILE.

THIS IS A FUN RECIPE, AND WE'RE GONNA COOK IT A LITTLE BIT DIFFERENT.
WE'RE NOT GOING TO BREAD IT AND PUT IT IN THE OVEN AND COOK IT.
WE'RE GONNA COOK THIS ON THE GRILL, AND WE'RE NOT JUST GONNA PUT IT ON OUR GRILL.
WE'RE GONNA PUT IT ON A CEDAR PLANK, WHICH WILL GIVE IT SOME NICE, GREAT FLAVOR.
YOU CAN COOK IT OVER AN OPEN FIRE OR YOU CAN COOK IT ON YOUR GRILL.
AND YOU'RE GONNA GET ALL THESE GREAT FLAVORS, AND THEN YOU'RE NOT GONNA HAVE ANYTHING TO CLEAN UP AS WELL.
SO THAT'S WHAT I LIKE.
SO WHAT WE'RE GONNA DO-WE'RE GONNA START TALK ABOUT OUR CEDAR PLANKS.
YOU WANT TO MAKE SURE THESE HAVE BEEN SOAKED FOR AT LEAST AN HOUR, IF NOT OVERNIGHT.
YOU WANT THEM TO BE REALLY, REALLY WET SO THAT THEY DON'T BURN ON YOUR-- EITHER ON YOUR CAMPFIRE OR ON YOUR GRILL.
AND YOU CAN BUY THESE AT THE STORE.
YOU CAN BUY 'EM TWO TO A PACK.
SO THEY'RE REALLY SIMPLE.
IF YOU HAVE YOUR OWN CEDAR, YOU CAN CUT YOUR OWN IF YOU'D LIKE, BUT SOME OF US DON'T GO OUT AND DO THAT.
SO YOU JUST NEED TO SOAK THIS.
YOU CAN SOAK IT IN WATER, YOU CAN SOAK IT IN WINE AND WATER, OR YOU CAN SOAK IT IN, LIKE, AN APPLE CIDER, WHICH WOULD BE REALLY GOOD AS WELL.
NO MATTER HOW--WELL, YOU KNOW, IT'S JUST GONNA ABSORB AND STEAM INTO YOUR FISH AND GIVE YOU THAT GREAT FLAVOR.
IF YOU DON'T WANT TO DO THE CEDAR PLANKS AND YOU WANT TO DO IT IN YOUR OVER-- YOU WANT TO DO IT THAT WAY-- YOU CAN.
THEY MAKE THESE CEDAR SHEETS NOW, THAT I FOUND IN THE GROCERY, WHICH I THINK ARE REALLY NEAT.
THEY'RE REALLY THIN, AND YOU JUST SOAK THESE.
GET THESE NICE AND MOIST AS WELL, AND THEN PUT 'EM ON YOUR BAKING SHEET.
AND YOU PUT YOUR FISH ON TOP OF THAT, AND YOU'RE STILL GONNA GET SOME OF THAT GREAT FLAVOR.
SO I'VE ONE IN HERE THAT'S SOAKING.
AND YOU JUST PULL IT OUT.
AND YOU SEE, IT'S REALLY THIN.
AND WE'RE JUST GONNA PLACE IT ON OUR BAKING SHEET.
YOU JUST PLACE IT RIGHT THERE ON YOUR BAKING SHEET, AND NOW YOU'RE READY TO GO.
WE'RE ALSO GOING TO TOP THIS WITH A LITTLE BIT OF ROSEMARY.
FRESH ROSEMARY OUT OF THE GARDEN-- OUT OF OUR HERB GARDEN.
WE'RE GONNA PUT THAT ON TOP OF OUR SHEET, AND THEN I'M ALSO GOING TO PUT IT ON TOP OF MY PLANK.
AND WE'RE JUST GONNA-- AND WE WANT THIS TO BE NICE AND MOIST AS WELL 'CAUSE IT'S GONNA STEAM UP TOO.
AND IT GIVES YOU JUST SOME GREAT FLAVOR.
SO WE'RE GONNA PUT THAT ON THERE.
MOVE THIS ASIDE.
AND NOW WE'RE READY TO GO.
WE'RE GONNA TAKE OUR MAHI FILLETS, AND WHAT I DID WHEN I WAS COOKING MINE AT HOME-- I PUT MY SPICY BREADER ON IT AND THEN I PUT IT ON THE GRILL JUST TO GET SOME GREAT GRILL JUST TO GET SOME REALLY GREAT GRILL MARKS ON MINE, AND THEN, I PUT IT ON MY PLANK.
BUT WE'RE GOING TO JUST PLACE IT ON TOP OF OUR ROSEMARY LIKE THAT, AND THEN WE'RE GONNA TAKE OUR SPICY BREADER AND JUST KIND OF DUST OUR MAHI WITH THAT.
SO YOU'RE STILL GONNA GET ALL THESE GREAT FLAVORS, WHICH IS, YOU KNOW, ALL THE SPICES.
YOU CAN ALSO DO LEMON PEPPER, WHICH WOULD BE GREAT, AND THEN YOU CAN SLICE SOME LEMONS ON TOP, WHICH WOULD GIVE IT SOME GREAT FLAVOR AS WELL.
AND THEN, WHAT I DO IS I JUST SPRITZ MINE WITH A LITTLE BIT OF--THIS IS OLIVE OIL.
WE'RE JUST GONNA SPRITZ THIS TO GET YOUR BREADER NICE AND MOIST.
AND THEN WE'RE JUST GONNA PUT IT ON OUR GRILL AND COOK IT UNTIL YOUR FISH IS COOKED THROUGHOUT.
AND WHAT I DO DURING THE GRILLING PROCESS IS I JUST MAKE SURE THAT MY WOOD STAYS NICE AND MOIST, SO I WILL TAKE MY WINE OR MY WATER AND JUST DRIBBLE IT OVER THE TOP JUST TO KEEP IT NICE AND MOIST AND KEEP THAT STEAM GOING SO THAT MY FISH WILL HAVE THAT GREAT FLAVOR AND THAT MY WOOD DOESN'T BURN UP EITHER.
SO THIS IS WHAT IT LOOKS LIKE WHEN IT COMES OUT.
YOU SEE, I HAVE SOME REALLY GREAT GRILL MARKS ON MINE, WHICH I THINK LOOKS NICE.
AND THEN I JUST SERVED IT WITH SOME GRILLED ONIONS AND SOME GRILLED TOMATOES.
AND IT'S A GREAT, NICE AND LIGHT AND HEALTHY DISH.

WE HOOKED UP ONE.
HAD HIM ON BRIEFLY, BUT JUST A LOT OF FUN.
IT WAS A REALLY PRETTY DAY OFF OUR COAST, WHICH IS A RARITY SOMETIMES IN SOME SEASONS, BUT YEAH.
WE CAUGHT ENOUGH MEAT FOR THE TABLE AND HAD A LOT OF FUN.
