The rolling call of the sandhill crane is unmistakable; it is one of the world’s oldest birds with prehistoric roots. In 2010, a limited fall hunt opened in the northwest corner of Minnesota, but in some states sandhills have been hunted for 60 years. Because of their delicious taste, sandhills are known as the “ribeye of the sky.”
