AND NORTH CAROLINA HAS HAD FISHING PIERS FOR YEARS, AND THEY'RE UP AND DOWN THE COAST.
AND TODAY WE'RE GONNA TAKE A LOOK AT CATCHING SPANISH MACKEREL, BLUEFISH OFF AN END OF A PIER IN MAY, WHEN THAT TIME COMES WHEN THESE SPANISH ARE--SHOW UP.
AND PEOPLE COME FROM ALL OVER THE STATE TO FISH IT, AND WE JUST HAD A GOOD DAY AND MET A LOT OF GOOD PEOPLE.
- AND THE FISHING CART THAT YOU TAKE WITH-- YOU GOT TO TAKE JUST ABOUT EVERYTHING YOU OWN WHEN YOU GO.

- I'VE BEEN LOOKING FORWARD TO THIS DAY, 'CAUSE IT'S BEEN A WHILE SINCE I'VE FISHED OFF OF A PIER.
AND I'M--I CAN'T WAIT TO SEE THESE SPANISH THEY'RE CATCHING.
- WELL, THEY'VE REALLY BEEN CATCHING SOME NICE SPANISH ON PLUGS, BLUEFISH.
IT'S JUST A GREAT WAY TO GET STARTED IN SALTWATER FISHING.
I KNOW THAT, YOU KNOW, MY EARLIEST MEMORIES OF SALTWATER FISHING WERE FISHING FROM THE PIER.
- YEAH, MINE TOO.
- WELL, MAYBE WE'LL GO OUT HERE TODAY AND CATCH SOME FISH.
THERE'S NOTHING--THE GREAT THING ABOUT SPANISH MACKEREL IS, THEY'RE SO MUCH FUN TO CATCH, BUT THEY'RE JUST FABULOUS EATING.

- WELL, TARA, WHAT I--YOU KNOW, WHAT I LEARNED A LONG TIME AGO WAS TO JUST TRY TO GET COMFORTABLE, BECAUSE IT'S REALLY NOT NATURAL TO HOLD A ROD THIS WAY.
- RIGHT.
- AND WHAT I DO IS JUST KIND OF KEEP THE PLUG MOVING ALONG WITH MY REEL.
AND THEN EVERY TIME I TWITCH THE ROD, THE PLUG GOES BACK AND FORTH.
- I SEE HOW-- - AND TO THE--TO THE BLUEFISH OR SPANISH MACKEREL, IT LOOKS LIKE A BAIT--YOU KNOW, A BAITFISH TRYING TO ESCAPE, YOU KNOW, BAITFISH.

I HAVEN'T HOOKED HIM YET, BUT I'M HOPING THAT MIGHT BE-- - YOU KNOW, WITH SPANISH MACKEREL, I PROBABLY CATCH 50% OF THEM RIGHT HERE BY THE PIER JUST--JUST HOPPING THE PLUG BACK AND FORTH.

I THINK A LOT OF TIMES, THEY HANG AROUND THE PIER EATING BAIT, AND IT'S A REALLY GREAT WAY TO CATCH THEM.

WHITE NORMALLY IS THE BEST IN CLEAR WATER.
CHROME LOOKS REALLY GOOD TO SPANISH MACKEREL.
THE REASON I PUT THE PINK PLUG ON YOURS IS, A FRIEND OF MINE HAS HAD--CAUGHT A COUPLE SPANISH ON PINK PLUGS.
AND SO IT'S JUST--YOU KNOW, YOU JUST--DIFFERENT DAYS, THEY'RE HITTING DIFFERENT COLORS, AND SOMETIMES IT'S CHARTREUSE.

THAT DAY, WE WERE FISHING OFF THE JOLLY ROGER PIER, WHICH IS ON TOPSAIL ISLAND, BUT HERE IN NORTH CAROLINA, WE'VE GOT OVER 20 PIERS STRETCHED UP FROM THE UPPER NORTHERN BEACHES AT NAG'S HEAD ALL THE WAY DOWN TO BELOW WILMINGTON.
SO, YOU KNOW, PLENTY OF ACCESS, PLENTY OF-- IF YOU WANT TO GO TRY IT, JUST A LOT OF FUN, AND YOU CATCH A VARIETY OF FISH.
- AND CATCHING FISH IS WHAT IT'S ALL ABOUT.

THIS IS A GREAT DISH, SOMETHING THAT YOU CAN MAKE AHEAD OF TIME AND FREEZE AND JUST HAVE HANDY, OR YOU CAN MAKE A WHOLE BIG PAN OF IT, FREEZE PART OF IT, AND ENJOY THE OTHER PART RIGHT THEN.
SO WE HAVE OUR VENISON THAT'S ALREADY SLICED INTO MEDALLIONS.
AND I'VE ALREADY POUNDED MINE OUT.
SO WE POUNDED IT OUT TO BE ABOUT 1/4 OF AN INCH THICK, SO YOU WANT THEM TO BE NICE AND THIN.
SO THEY'RE READY TO GO.
I'M GONNA USE SOME PORK BREADER TO COAT MINE, AND THESE ARE GONNA-- IT'S GONNA ADD THIS GREAT FLAVOR WITH ALL THESE SEASONINGS IN IT SO YOU DON'T HAVE TO WORRY ABOUT YOUR SALT, YOUR PEPPER, AND ALL OF YOUR OTHER INGREDIENTS.
IT'S ALREADY IN HERE FOR YOU.
SO WHAT WE'RE GONNA DO IS, WE'RE GONNA TAKE OUR MEDALLIONS HERE, AND WE'RE JUST GONNA COAT THIS WITH OUR BREADER.
AND, YOU KNOW, I LIKE TO USE MY WAX PAPER FOR EASY CLEANUP, AND IT GIVES ME A LITTLE BIT OF FLEXIBILITY TOO.
SO WE'RE GONNA MAKE SURE OUR OIL IS WARM, AND IT IS.
IT'S READY TO GO.
AND YOU WANT TO MAKE SURE THAT YOUR OIL IS WARM ENOUGH TO GET A GOOD SEAR AND ALSO NOT TO ABSORB.
SO YOU NEED TO MAKE SURE IT'S AT THE RIGHT TEMPERATURE, 'CAUSE IF IT'S TOO HOT, IT'LL BURN THE OUTSIDE AND NOT COOK THE INSIDE.
AND IF IT'S NOT WARM ENOUGH, THEN IT WILL--ALL THE VENISON WILL ABSORB THE OIL, AND THAT'S NOT WHAT WE'RE LOOKING FOR.
SO WE'RE GONNA GO AHEAD AND GET THOSE IN THERE SO THEY CAN GO AHEAD AND BROWN.
AND IT'S JUST GONNA TAKE A COUPLE MINUTES TO BROWN THESE.
SO YOU DON'T WANT TO COOK THEM THOROUGHLY.
YOU JUST WANT TO GET THE NICE CRUST ON THE OUTSIDE.
AND THEN WE'RE GOING TO MAKE A LITTLE SAUCE TO GO WITH THIS AS WELL.
SO WE'LL FINISH DOING OUR-- WE'LL JUST DO THREE.
I THINK THAT'S ALL MY PAN CAN HANDLE.
AND YOU MAY HAVE TO DO IT INTO STAGES, DEPENDING ON HOW MANY FILETS OR MEDALLIONS YOU'RE DOING, HOW MANY SERVINGS YOU WANT TO MAKE.
SO MY PHILOSOPHY IS, WHILE I HAVE IT OUT, LET'S JUST MAKE A WHOLE BUNCH.
AND THEN I DON'T HAVE TO DIRTY MY KITCHEN AGAIN.
SO WE'RE GONNA GO AHEAD AND MOVE THAT TO THE SIDE, BRING OUR BAKING DISH OVER HERE.
AND THEN WHILE THAT IS BROWNING, WE'RE GONNA GO AHEAD AND MAKE OUR SAUCE.
NOW, A LOT OF PEOPLE MAKE THEIR OWN SPAGHETTI SAUCE OR PASTA SAUCE, AND THAT IS GREAT.

I LIKE TO TAKE A NICE GOOD JAR OF PASTA SAUCE, AND THEN I LIKE TO ADD A LITTLE BIT OF FRESH INGREDIENTS TO KIND OF MAKE IT MY OWN, BUT I DON'T HAVE TO START FROM SCRATCH.
I JUST DON'T HAVE TIME OR THE PATIENCE FOR THAT.
SO I HAVE MY SAUCE HERE, AND YOU CAN ADD FRESH MUSHROOMS TO IT, GREEN PEPPERS, ONIONS, GARLIC, ALL KINDS OF GREAT FRESH INGREDIENTS.
YOU CAN ADD SQUASH, ZUCCHINI, TO IT IF YOU WANT.
AND THEN I ALSO LIKE TO ADD SOME FRESH PARSLEY TO MINE.
THAT KIND OF JUST GIVES IT THAT GREAT FRESH FLAVOR.
AND I JUST ADD THAT AT THE END.
SO MINE HAS BEEN COOKING AND SIMMERING.
AND THEN I JUST ADD MY FRESH PARSLEY TO IT.
AND THEN I JUST LET THAT SIMMER FOR JUST A LITTLE BIT LONGER.
AND THESE, I THINK, ARE ALMOST ABOUT READY TO BE TURNED.
LIKE I SAID, 'CAUSE WE JUST WANT TO COOK THEM LIGHTLY ON EITHER SIDE.
SO WE'RE GONNA GO AHEAD, TURN THOSE, AND ONCE YOU'VE BROWNED THEM ON EITHER SIDE-- THESE NEED TO COOK JUST A LITTLE BIT LONGER-- WE'RE GONNA PUT IT ALL TOGETHER.
SO WE'RE GONNA TAKE OUR SAUCE, AND WE'LL POUR IT INTO OUR BAKING DISH AND SPREAD IT AROUND THE BOTTOM OF OUR BAKING DISH.
AND THEN WE'RE GONNA TAKE OUR VENISON, AND WE'RE GONNA PUT THIS IN THERE.
AND WE'D USE A LITTLE BIT BIGGER PAN.
WE'RE JUST GONNA PUT THOSE TWO IN THERE.
AND THEN WE'RE GONNA SPRINKLE THIS, OF COURSE, WITH SOME PARMESAN CHEESE 'CAUSE THAT ALWAYS MAKES EVERYTHING GOOD.
YOU CAN DO A LITTLE BIT OF PARMESAN, A LITTLE BIT OF MOZZARELLA, DEPENDING ON WHAT YOU LIKE.
AND WHILE THIS IS IN THE OVEN BAKING FOR-- AT 350 FOR ABOUT 20, 25 MINUTES, GETTING ALL COOKED AND BUBBLY, YOU CAN GO AHEAD AND BOIL YOUR PASTA.
IF YOU WANT TO SERVE IT OVER PASTA, YOU CAN DO ANGEL HAIR.
YOU CAN DO PENNE PASTA, WHATEVER YOU HAPPEN TO LIKE.
AND I ALSO STEAMED SOME GREEN BEANS.

AND IT CHANGES DEPENDING ON THE TIME OF YEAR, SPRING BEING A POPULAR TIME, AND THE FALL SEASON WHEN YOU HAVE THE MIGRATIONS OF FISH COMING BACK DOWN THE BEACHES HEADING SOUTH.
BUT YOU CAN CATCH FISH YEAR-ROUND JUST ABOUT IN OUR CLIMATE, ALL THROUGH THE SUMMER MONTHS.
