You can drink your juice, but can you snack on it?
Check out these colorful, juice-filled balls.
How do you make them?
NARRATOR: Let's join the Science U campers as drop by drop, they make popping boba balls.
INSTRUCTOR: OK, you're about to do a chemical reaction here.
It's a very big word.
It's called spherification.
CHILDREN: Spherification!
INSTRUCTOR: Big word.
Basically, it means it's going to make little tiny spheres here.
OK?
NARRATOR: Yes, you can turn juice into juice-filled balls with spherification.
GIRL: It's got gelatinous outside and a liquid center.
Boba balls are made with fruit juice, water, and two food-friendly chemicals, sodium alginate and calcium chloride.
Sodium alginate is made from seaweed, and it will create a sphere of gel around the juice.
First, mix up one cup of your favorite fruit juice or soda with 2 grams of sodium alginate.
Store the solution in the fridge overnight to make sure all the bubbles disappear.
The next morning, it's ready to make boba.
But first, you need another solution.
Mix 2 grams of calcium chloride with 1 cup of water, and you're ready for the next step.
Take a syringe or a dropper and suck up the solution of juice and sodium alginate.
And then, one drop at a time, carefully squeeze drops into the calcium chloride solution.
GIRL: Making boba balls takes practice!
MAN: Just one drop at a time, one drop at a time!
When you put them in there, it creates calcium alginate, which is the sphere around the outside.
NARRATOR: After a short bath in clean water, your boba balls are ready.
Test them by squeezing them between your fingers.
[music playing] GIRL: Mmm!
