AND TWO GUYS THAT KNOW HOW TO USE A FLY ROD PRETTY MUCH IN ANY SITUATION.
BUT WE ARE TARGETING SHARKS OFF CAPE LOOKOUT ALONG THE SHOAL AREA, AN AREA KNOWN AS "SHARK ISLAND"-- TARGETING BLACKTIPS AND SAND BARS.
YOU SAY TARGETING, BUT THERE'S A LOT OF DIFFERENT SPECIES OF SHARKS THAT HANG OUT IN THIS AREA, BUT THOSE ARE THE TWO WE SAW THAT DAY.
AND YEAH, WITH THE RIGHT FLY-FISHING EQUIPMENT-- AND THESE GUYS HAVE IT-- AND THE KNOWLEDGE OF HOW TO DO IT, YOU CAN CATCH SOME NICE SHARKS AND WE DID.

GONNA PUT A LITTLE CHUM OUT AND SEE IF WE CAN'T FIND US A SHARK OUT HERE FOR YOU TO WHIP UP ON THAT FLY ROD.
- I HOPE SO, JOE.
I SPENT THE MORNING CATCHING ALBACORE AND SPANISH, AND I DIDN'T SEE BUT A LITTLE BIT OF BACKING ON SOME OF THE ALBACORE, BUT I GOT A FEELING WE'RE GONNA SEE SOME-- SEE SOMETHING ON THIS I HADN'T SEEN IN A WHILE.
SO THERE'S SOME NICE SHARKS OUT HERE.
THEY REALLY, REALLY ARE, AND IT'S NO TELLING WHAT SIZE AND WHAT KIND OF SHARK WE'LL CATCH.
- THAT'S RIGHT.
THEY COULD BE ANYWHERE FROM 3-FOOT TO 8-FOOT.
THERE'S A LOT OF SPINNER SHARKS OUT HERE, BLACKTIPS, BLACK NOSE, SAND TIGERS, A LITTLE BIT OF EVERYTHING.
SO WE'RE GONNA PUT THIS CHUM OUT AND GET US A SLICK GOING.
AND IN ABOUT 30 MINUTES TO AN HOUR, HOPEFULLY WE'RE GONNA HAVE SOMETHING COME UP AND WANT TO EAT SOMETHING.
- WELL, LET'S SEE THAT OUT THERE AND SEE IF WE CAN'T FIND SOME CUSTOMERS, PARTNER.

WE'VE GOT STUFF FLOATING ALONG TOP, WHICH IS DRAWING THE BIRDS, BUT I DON'T THINK WE'LL BE WAITING TOO MUCH LONGER BEFORE WE GET A COUPLE OF CUSTOMERS IN HERE.

- MAN, IT IS GATORADE TIME, BUDDY, RIGHT AFTER I PUT THIS FLY ROD IN YOUR HAND.
- OKAY, WE CAN DO THAT.
- OH, MAN.

LORD HAVE MERCY.
- NOW, THAT'S IMPRESSIVE CATCHING A 100-POUND SHARK ON A FLY ROD.
- IT IS, AND--BUT THIS DAY AND TIME YOU HEAR ALL THE TIME ABOUT DEEP-- A LOT OF MARLIN FISHING, WHITE MARLIN, BLUE MARLIN-- SAILFISHING'S DONE WITH FLY RODS NOW, IF YOU'VE GOT THE RIGHT TACKLE-- AND THAT'S SO IMPORTANT-- ANY TIME YOU TARGET LARGE FISH LIKE THIS, YOU NEED TO HAVE THE RIGHT TACKLE AND, YOU KNOW, THESE GUYS DO IT ALL THE TIME FOR MANY DIFFERENT SPECIES OF FISH.
AND SO--AND WE HAVE THE SHARKS.
THE SHARKS ARE OUT THERE.
IT'S ALL CATCH AND RELEASE FOR THESE GUYS, AND WE HAD A LOT OF FUN.
- WELL, THE RIGHT TACKLE-- LET'S FIND OUT MORE.
LET'S GO TO GEAR TIME.
[light instrumental music] ♪ ♪ - JOE, I TELL YOU, WE TOOK THE BUSIEST WEEKEND OF THE YEAR PROBABLY ON THE COAST-- LABOR DAY WEEKEND.
I TOOK A BUSMAN'S HOLIDAY AND YOU TOOK AN AFTERNOON OFF TO CARRY ME TO YOUR FAVORITE SHARK HOLE JUST ON THE EAST SIDE OF THE SHOALS.
AND I TELL YOU, BUDDY, WE TESTED EVERYTHING WITH THE CHUM.
WE GOT--WE GOT CHUM ON THE WAY ACROSS.
WE GOT MORE CHUM THAN I THOUGHT WE WERE GONNA EVER NEED.
BUT WE ALSO PUT THIS TARPON ROD AND 20-POUND TIPPET TO ALL IT WANTED THIS AFTERNOON.
- THAT'S RIGHT.
YOU KNOW, SPEAKING OF BAIT, YOU KNOW, WE DID CATCH BAIT ON THE WAY OVER.
BUT MY TIP TO EVERYBODY SHARK FISHING OR CHUMMING: WHEN YOU CATCH ALL THE BAIT YOU THINK YOU NEED, MAKE ONE MORE CAST.
YOU DON'T WANT TO RUN OUT OF BAIT.
IT MAY TAKE AN HOUR OR TWO HOURS TO GET THESE SHARKS IN THE CHUM SLICK.
BUT WHEN YOU GET THEM THERE, YOU WANT TO HAVE ENOUGH BAIT TO KEEP THEM THERE.
- WELL, WE DEFINITELY HAD SOME CUSTOMERS.
AND I TELL YOU, WE HAD ALMOST PERFECT CONDITIONS.
TIDE-WISE, EVERYTHING WAS GREAT.
WATER--WATER CLARITY WAS OUTSTANDING.
WE JUST DIDN'T HIT THE NAIL ON THE HEAD WITH THE SUNSHINE.
IF WE'D HAD SOME SUNSHINE, WE WERE IN 6, MAYBE 8 FOOT OF WATER.
SO WE WOULD'VE SEEN MOST OF THESE SHARKS COMING IN.
AS FAR AS THE SIGHT CASTING GOES, THOUGH, WE WERE ABLE TO SEE THEM COME UP AND EAT.
AND IF WE PUT THE FLY CLOSE TO THEM AND JUST TWITCHED IT, IT WAS PRETTY AMAZING.
- THAT'S RIGHT.
YOU KNOW, AND SPEAKING OF FLIES, WHAT WE WERE USING FOR FLIES TODAY.
I ALWAYS TIE UP THESE WHITE FLIES.
BECAUSE WE'RE THROWING MENHADEN OUT, THEY'RE PRETTY MUCH WHITE.
AND WHEN THEY'RE FLOATING UPSIDE DOWN ON TOP OF THE WATER, THEY'RE KEYING IN ON THAT WHITE COLOR.
WE STARTED OFF WITH THIS ORANGE AND RED FLY, WHICH IS NORMALLY A REAL GOOD SHARK FLY.
BUT WHEN WE WERE CHUMMING, WE SWITCHED TO THAT WHITE.
AND ON THE FIRST CAST, YOU CAUGHT THAT FIRST FISH.
YOU KNOW, WHAT YOU WANT TO DO WHEN YOU RIG THIS, I'VE GOT ABOUT A 12-INCH SHOT OF NUMBER 5 WIRE, LITTLE WHITE, LIGHT WIRE.
AND INSTEAD OF DOING AN ALBRIGHT KNOT, I CHEAT AND PUT ONE OF THESE LITTLE SMALL SPRO SWIVELS ON THE FRONT BECAUSE WE'RE PUTTING A LOT OF HEAT ON THESE FISH.
AND A LOT OF TIMES THE ALBRIGHT KNOT-- WHEN YOU PUT THAT HEAT BETWEEN WIRE AND MONO, IT'S GONNA SEPARATE RIGHT THERE.
- YUP.
WELL, I TELL YOU IT'S BEEN A-- IT WAS A HECK OF AN AFTERNOON.
WE HAD SOME REALLY NICE FISH, PROBABLY 100-PLUS POUNDS ON SEVERAL OF THEM.
SO IT'S A GREAT FISHERY AND SOMETHING FOLKS CAN REALLY ENJOY WITHOUT SPENDING A LOT OF MONEY TO GO OFFSHORE.
BUT THIS IS THE EQUIVALENT OF BASICALLY TARPON OR BUELL FISHING RIGHT HERE WITHIN SIGHT OF LAND.
- THAT'S RIGHT, AND WE'D REALLY LIKE TO GET PEOPLE TO COME DOWN AND TRY THIS.
IT'S A LOT OF FUN WHETHER WE'RE FLY-FISHING AS WE WERE TODAY OR CONVENTIONAL FISHING.
BUT I ENJOYED IT, CHUCK.
A LOT OF FUN, BUDDY.

I DARE YOU TO SAY THAT THREE TIMES FAST.
SO WE'RE GOING TO START OFF WITH OUR BEAUTIFUL SCALLOPS THAT WE HAVE IN OUR BOWL.
AND MINE WERE SO BIG, AND YOU CAN JUST FIND THESE HUGE SCALLOPS NOW.
SO WHAT I HAD--I'VE DONE IS I CUT MINE INTO FOURTHS BECAUSE I WANTED MINE TO BE MORE BITE-SIZED, AND I THINK YOU CAN GET MORE OUT OF A SMALLER QUANTITY TOO.
SO I HAVE THEM IN MY BOWL, AND THEN I'M JUST GONNA SPRINKLE SOME SALT ON THIS AND SOME CRACKED BLACK PEPPER.
AND I LIKE TO USE FRESH CRACKED BLACK PEPPER.
I JUST THINK IT HAS A LITTLE BIT BETTER TASTE, BUT YOU CAN USE WHAT YOU HAVE.
WHOOPS.
SO WE'RE JUST GONNA GIVE THOSE A TOSS, AND THEN WE'RE GONNA SET THOSE ASIDE, AND WE'RE GONNA MAKE OUR CRUST FOR OUR SCALLOPED SCALLOPS.
AND WE'RE GONNA BRING OUR BOWL OVER, AND WE'RE GONNA ADD SEVERAL INGREDIENTS.
IT'S GONNA BE KIND OF LIKE WHEN YOU MAKE A CRACKER CRUMB CRUST.
WE'RE GONNA ADD BUTTER.
WE'RE GONNA HAVE CRACKER CRUMBS.
WE'RE GONNA ADD SOME SOUTHERN BAKE.
AND WE'RE GONNA MIX ALL THOSE TOGETHER WITH A LITTLE PARMESAN CHEESE TOO.
SO IT'S GONNA BE GREAT.
WE'RE GONNA START OUT WITH OUR CRACKER CRUMBS.
AND YOU CAN USE SALTINES IF YOU WANT.
YOU CAN USE A MIXTURE OF WHATEVER YOU HAVE.
MY FAMILY, WE LIKE OURSELVES SOME CRACKERS WITH SOME BUTTER IN THEM SO THAT'S WHAT WE MADE IN HERE TO JUST GIVE IT A LITTLE BIT-- A RICHER TASTE.
AND I JUST PUT THOSE IN MY FOOD PROCESSOR, GAVE THEM A PULSE UNTIL THEY WERE A FINE CRACKER CRUMB.
WE'RE GONNA ADD SOME PARMESAN CHEESE.
AND THEN WE'RE GOING TO ADD SOME CHICKEN BAKE IN HERE.
IT'S GOING TO GIVE IT SOME GREAT FLAVOR AS WELL AS BRING IT ALL TOGETHER.
SO WE'RE GONNA ADD ABOUT 1 CUP OF THIS.
AND WE'RE GONNA TOSS ALL OF OUR DRY INGREDIENTS TOGETHER SO THEY GET NICE AND MIXED, AND THEN WE'RE GONNA ADD IN OUR BUTTER.
SO WE'RE GOING TO GIVE THAT A TOSS.
AND IF YOU WANT, YOU CAN ADD, YOU KNOW, A VARIETY OF--YOU DON'T HAVE TO JUST USE SCALLOPS.
IF YOU HAVE SOME LEFTOVER WHITEFISH YOU WANT TO USE OR IF YOU HAVE SOME SHRIMP THAT YOU WANT TO USE, YOU CAN JUST MIX IT ALL UP AND MAKE A SCALLOPED SEAFOOD IF--IF YOU'D LIKE.
WE HAVE OUR 1/3 CUP OF BUTTER THAT WE'VE MELTED IN THE MICROWAVE.
AND I LIKE TO USE BUTTER AND NOT MARGARINE 'CAUSE I THINK BUTTER HAS A GREAT FLAVOR TO IT.
SO I'M GONNA USE THAT.
SO YOU CAN SEE IT'S KIND OF LIKE WHEN YOU MAKE A CRACKER CRUMB CRUST.
AND GIVE THAT A TOSS UNTIL IT'S ALL COATED.
AND WE'RE GONNA BAKE THIS IN A--IN A SHALLOW PAN.
SO WE'RE GONNA USE A--THIS IS, LIKE, AN 8x11 BAKING DISH.
WE'RE GONNA SPRAY THAT WITH A NONSTICK SPRAY AND GET THAT READY.
WE'RE GONNA HEAT OUR OVEN TO 350 DEGREES.
AND THIS ONLY TAKES ABOUT 15 TO 20 MINUTES TO BAKE.
SO IT'S GONNA GO TOGETHER REALLY QUICKLY.
YOU'RE GONNA BE ABLE TO PUT IT IN YOUR OVEN, BAKE IT.
AND WHILE YOU'RE BAKING IT, YOU CAN MAKE YOUR SALAD OR YOU CAN STEAM YOUR VEGETABLES TO GO ALONG WITH IT, AND THEN YOU'RE READY FOR DINNER.
SO ONCE WE'VE GOT OUR MIXTURE ALL COMBINED WITH OUR BUTTER, WE'RE GONNA ADD IN OUR SCALLOPS AND GIVE IT A TOSS TO COAT OUR SCALLOPS, AND THEN WE ARE READY TO PUT IT IN OUR BAKING DISH.
SO WE'RE GONNA COAT THAT.
WE'RE GONNA PLACE THAT IN OUR BAKING DISH AND SPREAD IT OUT.
AND THEN WHAT'S GONNA HOLD THIS ALL TOGETHER IS WE'RE GONNA DRIZZLE SOME HALF AND HALF OVER IT SO YOU KNOW IT'S GONNA BE GOOD.
AND YOU CAN PUT SOME FRESH PARSLEY IN HERE OR SOME SCALLIONS WOULD BE NICE TOO.
GIVE IT A LITTLE BIT OF SOME ONION FLAVOR AND A LITTLE COLOR.
SO WE'RE JUST GONNA DRIZZLE THAT OVER.
LET IT SOAK IN.
LIKE I SAID, PUT IT IN THE OVEN AT 350 FOR ABOUT 25 MINUTES OR SO UNTIL IT'S ALL NICE AND BUBBLY.
IT'S GREAT.
SO LET'S TAKE A LOOK AND SEE WHAT IT LOOKS LIKE WHEN IT'S FINISHED.
