I REALLY THINK THE-- YOU KNOW, LATER INTO THE WINTER, LATER INTO THE FALL, ALL THROUGH THE WINTER AND THE EARLY SPRING-- I MEAN, THEY DO THIS ALL THE WAY THROUGH JANUARY, REALLY.
THEY GET UP ON THESE SHOALS, AND AS LONG AS THE WATER'S CLEAR AND YOU CAN SEE 'EM, THAT'S THE BEST TIME TO COME.
AND USUALLY, THAT'S IN THE LATE FALL, WINTER, AND EARLY SPRING IS, YOU KNOW-- SO THAT COLDER WATER ALWAYS A LITTLE CLEARER.
IT IS, AND I'VE EVEN CAUGHT 'EM IN WATER AS COLD AS 46 DEGREES, BUT YOU KNOW, TODAY, OF COURSE, IT'S 65 DEGREES.

AND THE GUYS ALLUDED TO IT WHILE THEY WERE OUT THERE.
YOU JUST NEED TO PAY ATTENTION TO THE CONDITIONS AROUND YOU.
A LOT OF TIMES WHEN YOU GET CAUGHT UP CATCHING FISH, YOU--THAT BECOMES OBLIVIOUS TO YOU AND...
BUT YOU REALLY DO NEED TO HAVE LIFE PRESERVERS CLOSE BY AND KNOW WHAT YOU'RE DOING.
JUST DON'T RUN OUT THERE ON ANY DAY.
PICK YOUR DAYS.
AND--AND THE FISH ARE NOT ALWAYS THERE.
WE JUST HAPPENED TO-- WE LOOKED DOWN THE BEACHES FOR 'EM AND DIDN'T FIND 'EM, AND THAT'S WHERE THEY WERE.
BUT THEY WERE ON THE SHOALS FEEDING, AND WE MADE THE BEST OF IT AND CAUGHT A LOT OF FISH.
WELL, WE DID CATCH A LOT OF FISH.
LET'S FIND OUT HOW WE DID THAT.
LET'S GO TO GEAR TIME.
STU, MAN, WHAT A GREAT DAY OF CATCHING REDFISH IN THE OCEAN.
HAD A LITTLE TOUGH TIME THERE EARLIER: RAN THE BEACH, REALLY LOOKING FOR 'EM UP TIGHT ON THE BEACH AND SAW A COUPLE FISH BUT NOT A HUGE SCHOOL, BUT REALLY GOT INTO THAT BIG SCHOOL RIGHT THERE, RIGHT THERE KIND OF ON THAT SHOAL-Y WATERS JUST OUTSIDE THE INLET, SO IT WAS A GOOD TIME.
THAT'S RIGHT, THE PAST COUPLE OF DAYS, WE'VE ACTUALLY BEEN FINDING THEM ON THE BEACH.
AND WE RAN IT, AND THE WATER CLARITY IS GREAT.
WE HAD THE RIGHT SUN AND EVERYTHING SO WE COULD SEE 'EM.
AND IT'S REAL IMPORTANT TO HAVE THE CONDITIONS RIGHT FOR THIS.
YOU NEED SMALL SURF, CLEAR WATER, AND YOU NEED-- I LIKE RISING TIDE FOR THIS KIND OF THING.
AND WE GOT OVER THOSE SHOALS, AND WE WERE DRIVING BY, AND YOU LOOKED OVER AND WERE LIKE, "THERE THEY ARE."
YOU KNOW?
YOU COULD SEE 'EM REALLY CLEAR ON THAT BACK SIDE OF THE WAVE.
BUT IT WAS INTERESTING TO USE TWO DIFFERENT KIND OF RODS HERE.
I MEAN, YOURS--YOU WERE USING THE LIGHTER STUFF.
I WAS USING--THIS ONE IS JUST A LITTLE QUANTUM CABO 20 WITH A QUANTUM CABO ROD IN AN 8- TO 14-POUND CLASS.
AND THIS ONE HERE I WAS USING WITH A 1/4 OUNCE HEAD, BECAUSE WE'RE IN REALLY SHALLOW WATER.
BUT WHEN THEY WERE CLOSER TO US, WE COULD THROW THIS ONE.
WITH JUST--WITH A LITTLE D.O.A.
FORK-TAIL BAIT ON THERE.
BUT WHEN WE WERE FURTHER AWAY, YOUR ROD SEEMED TO WORK A LOT BETTER.
A LITTLE BIT LONGER.
THEY WERE MILLING OUT FURTHER INTO THAT SHOAL.
WE COULDN'T GET THE BOAT IN THERE BUT-- THAT'S RIGHT.
YOU KNOW, SOMETIMES JUST GETTING THAT BAIT OUT THERE AND JUST LETTING IT SIT THERE AND JUST A LITTLE BIT OF TWITCH AND THEY'D GET RIGHT ON IT.
IT WAS--IT'S AMAZING.
THAT SEEMED TO BE THE BEST THING, WAS TO GET IT IN FRONT OF THE PACK OF FISH, LET IT SIT THERE, AND JUST KIND OF WIGGLE IT AND JUST WIGGLE THAT BAIT ON THE BOTTOM.
THEY'D PICK IT RIGHT UP OFF THE BOTTOM, YOU KNOW?
IT'S ALWAYS NICE WHEN IT WORKS OUT RIGHT.
AND IT WORKED OUT GREAT, SO HAD A GREAT DAY AND YOU KNOW, REALLY LOOKING FORWARD TO GETTING OUT THERE AND DOING IT AGAIN.
YEAH, WE DEFINITELY WILL.
AND YOU KNOW, IT WAS-- ONE THING WE HAD TO HAVE TODAY WAS THE RIGHT CONDITIONS.
YOU HAD TO HAVE A GOOD PAIR OF SUNGLASSES.
I'M USING A PAIR OF SMITH PASSAGE SUNGLASSES.
AND YOU HAD TO HAVE A GOOD PAIR OF POLARIZED GLASSES, 'CAUSE YOU'VE GOT TO SEE THE FISH.
IF NOT, YOU'RE JUST CASTING IN THE MIDDLE OF NOWHERE.
YEAH, THAT WAS IMPORTANT, YOU KNOW, BECAUSE EVEN WHEN YOU COULD SEE 'EM, EVEN IF YOU DIDN'T GET THE BAIT RIGHT ON 'EM, YOU KNOW, YOU WOULDN'T GET A BITE, BUT WE HAD PLENTY OF BITES.
THERE MUST HAVE BEEN 500 FISH IN THAT SCHOOL.
IT'S AMAZING.
I COULD JUST SIT OUT THERE AND LOOK AT 'EM.
OH, IT WAS A BEAUTIFUL THING.

HELLO, TODAY IN THE KITCHEN WE'RE GONNA MAKE SOME SPICY SHRIMP, AND THEN WE'RE GONNA MAKE A GREAT AVOCADO AND ORANGE SALSA TO GO ON TOP.
IT'S GONNA GO TOGETHER QUICK AND EASY SO YOU CAN BE IN AND OUT OF THE KITCHEN BUT STILL HAVE A GREAT, COLORFUL DINNER.
SO WE'RE GONNA GO AHEAD, AND I HAVE MY PAN HEATING UP WITH SOME OIL IN IT.
WE'RE JUST GONNA PUT A LITTLE BIT OF OIL, MAYBE, LIKE, THREE TABLESPOONS, JUST ENOUGH TO COAT THE BOTTOM.
AND THEN WE'RE GOING TO TAKE OUR SPICY BREADER, AND WE'RE GONNA PUT THIS ON SOME WAXED PAPER.
AND THEN WE'RE GONNA JUST TAKE OUR SHRIMP THAT'S PEELED AND DEVEINED.
AND YOU CAN USE THE LARGE SHRIMP OR THE SMALL SHRIMP, DEPENDING ON WHAT YOU HAVE.
AND WE'RE JUST GONNA COAT THIS WITH OUR BREADER.
AND THEN WE'RE JUST GONNA PLACE IT IN OUR PAN AND PANFRY THESE.
THEY WON'T TAKE VERY LONG.
YOU JUST WANT TO COOK THEM TILL THE SHRIMP ARE OPAQUE OR TILL THEY'RE JUST LIGHTLY PINK AND FLUFFY--PLUMPY.
SO WE'RE GOING TO TAKE THESE AND JUST DROP THEM THERE IN OUR OIL.
AS YOU CAN SEE, THEY'RE GONNA FRY UP REALLY QUICK, SO WE'RE GONNA-- WHILE THESE ARE FRYING UP, WE'RE GONNA GO AHEAD AND MAKE OUR SALSA, WHICH GOES TOGETHER QUICK AND EASY TOO.
YOU CAN TELL I'M A MESSY COOK, HUH?
SO THERE WE GO.
SO THAT'S-- THEY'RE GONNA PANFRY UP.
AND THOSE LOOK GREAT, AND THEY SMELL SO GOOD.
THAT SPICER BREADER JUST ADDS ALL THESE GREAT SPICES TO IT.
YOU DON'T HAVE TO THINK ABOUT IT, AND YOU'RE READY TO GO.
AND IF YOU DON'T WANT THEM QUITE AS SPICY, YOU CAN ADD IN A LITTLE BIT OF THE PLAIN SEAFOOD BREADER, JUST TO KIND OF CUT DOWN ON YOUR SPICE.
WE'RE GONNA TAKE OUR BOWL, AND I ALREADY HAVE MY AVOCADOS, WHICH ARE ALREADY CHUNKED UP.
AND I WOULD BUY SOME THAT ARE A LITTLE BIT FIRM, MAYBE NOT SO RIPE.
AND BUY EXTRAS, BECAUSE SOMETIMES THEY'RE DARK INSIDE, AND YOU JUST NEVER KNOW WITH AN AVOCADO WHAT YOU'RE GONNA GET.
SO YOU MIGHT WANT TO HAVE A FEW EXTRAS ON HAND IN CASE YOU DON'T LIKE THE WAY SOME OF THEM LOOK.
THEN WE'RE GONNA ADD IN-- SO THIS IS ABOUT ONE AVOCADO THAT WE'VE CHUNKED.
THEN I HAVE SOME SCALLIONS, INCLUDING THE GREEN, WHICH I LIKE.
THEN YOU CAN USE FRESH ORANGES IF YOU WANT-- FRESH NAVEL ORANGES-- OR YOU CAN USE MANDARIN ORANGES WHICH COME IN A CAN.
YOU CAN KEEP THEM ON YOUR PANTRY SHELF.
I LOVE THEM, BECAUSE YOU GET THIS GREAT JUICE.
BUY IT WITH THE-- IN THE LIGHT JUICE.
AND THEY'RE EASY TO USE, AND THEY'RE READY TO GO, AND THEY'RE ALWAYS FLAVORFUL.
AND THEN WE'RE GONNA ADD JUST A LITTLE BIT OF LIME JUICE TO THIS.
AND YOU CAN ADD SOME SALT AND PEPPER IF YOU LIKE.
AND WE HAVE THIS WONDERFUL SALSA.
AND THE ORANGE JUICE WILL HELP COAT THE AVOCADO SO-- AND THE LIME JUICE-- SO THAT IT WON'T TURN BROWN.
SO LET'S CHECK ON OUR SHRIMP HERE.
IT'S LOOKING GOOD: NICE AND BROWN AND CRUNCHY.
AND THAT IS ALMOST READY.
AND WE'RE GONNA SERVE THIS SHRIMP OVER SOME YELLOW RICE.
OR YOU CAN USE BROWN RICE.
OR IF YOU HAVE PASTA, YOU CAN DO THAT.
OR YOU CAN JUST SERVE IT OVER A SALAD IF YOU WANT.
OVER A BED OF GREENS WITH THE SALSA WOULD BE YUMMY TOO.
SO WE HAVE THOSE; THOSE ARE ABOUT DONE.
AND THEN I HAVE A FINISHED PLATE RIGHT HERE.
I'VE SERVED MINE IN A PIE PLATE JUST FOR SOMETHING A LITTLE BIT DIFFERENT.
I HAVE MY SHRIMP PILED UP, AND THEN I'M GONNA PUT ON MY BEAUTIFUL SALSA.
AND IT IS JUST GOING TO BE SUCH GREAT COLOR GOING ON HERE THAT I THINK YOUR FAMILY AND YOURSELF WILL BE SO IMPRESSED.
AND I LOVE THE TASTE OF FRESH AVOCADOS, AND THE ORANGE IS JUST SO GREAT.
SO LOOK HOW BEAUTIFUL THAT IS.
WE'RE GONNA TAKE IT OVER HERE.
AND THIS IS WHAT IT LOOKS LIKE WHEN YOU'RE READY TO SERVE.
SO I HOPE YOU ENJOY THE SHRIMP WITH THE AVOCADO AND ORANGE SAL--SALSA.

YEAH, IT'S REALLY SOMETHING TO HAVE THAT MANY RED DRUM IN FRONT OF YOU.
THERE WAS, YOU KNOW, I SAID EARLIER, 300 TO 400, MAYBE EVEN 500 SLOT-SIZED DRUM IN A FEEDING MODE, WHICH EVERY FISHERMAN WOULD LOVE TO HAVE THAT SITUATION IN FRONT OF THEM.
AGAIN, WE HAD STARTED THE MORNING LOOKING DOWN THE BEACHES.
STUART HAD CAUGHT FISH ALONG THE BEACHES ALL WEEK PRIOR, AND THAT'S WHERE WE LOOKED AT THE START OF THE DAY AND COULDN'T FIND ANY.
BUT THEY WERE ALL CONGREGATED RIGHT HERE IN RICH INLET ON THE SHOALS.
AND AGAIN, NOT TO OVEREMPHASIZE IT, BUT TO EMPHASIZE IT, YOU DO NEED TO BE SAFE, BECAUSE IT IS AN AREA THAT'S EVER CHANGING.
WHEN THE TIDE STARTS MOVING, YOU KNOW, YOU'RE GONNA HAVE A CHANGE.
AND THAT DAY WAS REALLY PRETTY, BUT WE DID HAVE SOME--A COUPLE OF ROLLERS THAT WOULD COME IN THAT WOULD GET YOUR ATTENTION.
SO BE SURE YOU HAVE YOUR LIFE PRESERVERS OUT.
BUT IF YOU EVER CAN EXPERIENCE THAT, YOU NEED TO TRY IT, 'CAUSE IT'S LOADS OF FUN.
