SPRING IS A GOOD TIME TO CATCH THEM.
WE CAN CATCH THEM ALL DURING THE SUMMER TOO, BUT THIS IS KIND OF LATE SUMMER.
THIS IS A LATE SUMMER TRIP, BUT WE'RE FISHING EARLY IN THE MORNING.
TYPICALLY IF YOU'RE GONNA HAVE ANY WIND ON THE COAST, IF YOU CAN GET OUT FOR A COUPLE HOURS IN THE EARLY MORNING, YOU CAN BEAT THE WIND, AND THAT'S WHAT WE DID THAT MORNING, AND CAUGHT SOME FISH.

USUALLY ABOUT THIS TIME OF THE YEAR, THE BLACK TIPS GET UP HERE AND GET REAL AGGRESSIVE ON THESE THINGS, AND IT'S AMAZING THAT THEY CAN CATCH THEM.
THAT'S WHAT GETS ME, IS THAT THEY CAN RUN THEM DOWN AND CATCH THEM.
I GUESS WHEN THEY'RE ON THE END OF A LINE THOUGH, THEY CAN'T QUITE GO AS FAST AS THEY NORMALLY DO.

WHAT WE DID THAT MORNING, STU HAD BEEN OUT FISHING EARLIER IN THE WEEK, AND IT WAS JUST RUNNING OUT OF THE INLET-- MASONBORO INLET, AND GOING A LITTLE SOUTH, AND HE HAD FOUND SOME FISH HOLDING, AND THESE WERE NOT REAL BIG SPANISH, BUT THAT TIME OF YEAR WHEN EVERYTHING SLOWS DOWN BECAUSE OF THE WATER TEMPERATURE, THEY'RE A LOT OF FUN TO CATCH, AND YOU MATCH YOUR TACKLE WITH THEM AND HAVE THE RIGHT LURE, AND YOU HAVE A LOT OF FUN.
- TALK ABOUT MATCHING TACKLE.
LET'S GO TO GEAR TIME.
- STU, SUMMERTIME, IN SHORE OCEAN RIGHT HERE OFF OF WRIGHTSVILLE BEACH, THERE'S NOT A BETTER FISH-- MORE FUN FISH TO CATCH THAN SPANISH MACKEREL.
- MAN, THERE REALLY ISN'T BECAUSE THEY'RE SO AGGRESSIVE.
YOU JUST GOT TO GET THE LURE IN FRONT OF THEM, JUST SEE THEM BUST IN THE WATER, CRANK IT AS FAST AS YOU CAN, AND JUST HANG ONTO THE ROD.
- A LOT OF PEOPLE TRAWL FOR THESE FISH, BUT WE WERE DOING IT DIFFERENT TODAY.
WE WERE SEEING THE SCHOOLS OF FISH, WE WERE RUNNING UP TO THE EDGE OF THEM WITHIN CASTING RANGE AND CASTING LIGHT TACKLE TO THEM, AND IT WAS A BLAST.
- THAT'S RIGHT.
WE WERE JUST STAYING OFF THE FISH JUST SO WE MADE SURE WE DIDN'T SPOOK THE SCHOOLS, USING LIGHT OUTFITS, USING JUST LITTLE 8-, 10-POUND CLASP SPINNING GEAR, USING THE FAVORITE MARIAH JIG.
THIS THING WAS GOLDEN TODAY.
- THEY WERE PERFECT.
- AND THEY JUST CAN'T STAND THIS THING.
PUT A LITTLE 30-POUND LEADER ON TOP OF IT, STAY OFF OF THEM, THROW IT IN THERE, CRANK IT AS FAST AS YOU CAN, AND JUST WAIT FOR THEM TO COME OVER, 'CAUSE THEY'RE JUST GOING TO PILE ON IT.
- THAT'S RIGHT, AND THEY DID TODAY.
WE CAUGHT A BUNCH OF FISH AND HAD A TERRIFIC TIME OUT THERE TODAY, AND A REALLY GREAT QUALITY OF FISH TOO, NICE SIZED GLASS FISH.
- IT REALLY IS.
FOR THIS TIME OF THE YEAR, USUALLY YOU GET SOME SMALLER FISH, BUT, YOU KNOW, THEM TWO AND THREE POUNDERS, TAKE THAT ANY DAY OF THE WEEK.
- ABSOLUTELY, THESE WERE THE TICKET TODAY.
- THAT'S RIGHT, THE PINK ONE, AND THE GREEN KIND OF GOLD AND SILVER, AND A 14 GRAM-- THAT'S IT.
YOU CAN THROW IT A GOOD, LONG WAYS, PUT YOU SOME GOOD BRAID ON YOUR REEL.
THAT'LL HELP YOU GET A LITTLE MORE DISTANCE.
STAY OUT OF THE FISH AND JUST GO WITH IT.

SO, LET'S GO AHEAD AND GET STARTED.
WHAT WE'RE GONNA DO IS WE'RE GOING TO TAKE OUR IN-YOUR-OVEN BREADER, AND WE'RE GOING TO PLACE IT IN OUR BAG, AND THEN YOU KNOW HOW I LIKE TO USE THE IN-YOUR-OVEN, 'CAUSE THEN I CAN JUST POP IT IN MY OVEN-- IT COMES OUT NICE AND CRISPY, BUT I ALSO LIKE TO ADD SOME FLAVORINGS TO IT.
SO, I'M GOING TO ADD IN JUST A LITTLE BIT OF LEMON PEPPER BREADER, SO IT'LL GIVE ME LOTS OF THAT GREAT FLAVOR, AND I DON'T HAVE TO THINK ABOUT WHAT SEASONINGS I WANT TO USE, AND--BUT I GET TO USE THE IN-YOUR-OVEN, WHICH IS QUICK AND EASY AS WELL.
SO I'M JUST GOING TO GIVE THAT A SHAKE.
I'M GOING TO TAKE MY FISH FILLETS, AND YOU CAN USE GROUPER; YOU CAN USE ANY TYPE OF WHITE FISH THAT YOU LIKE AND YOU HAPPEN TO HAVE.
WE'RE JUST GOING TO CLOSE OUR BAG AND GIVE IT A GOOD SHAKE TO COAT IT, AND THEN WE'RE GOING TO PLACE IT ON OUR BAKING SHEET THAT I'VE COATED WITH A NONSTICK FOIL.
OR YOU CAN USE PARCHMENT PAPER, OR YOU CAN USE YOUR BAKING SHEET, BUT I LIKE TO KEEP MY SHEET NICE AND CLEAN, AND THEN I HAVE LESS CLEANUP AT THE END AS WELL.
SO I'M ALL ABOUT GETTING IN AND OUT OF MY KITCHEN QUICKLY.
SO I'M GONNA GIVE THAT ANOTHER SHAKE AND THEN WE HAVE-- THESE ARE READY.
SO WHILE THESE ARE IN YOUR OVEN, BAKING AND CRISPING UP, YOU'RE GONNA BAKE THESE AT ABOUT 400 DEGREES FOR ABOUT TEN MINUTES, DEPENDING ON THE THICKNESS OF YOUR FISH FILLETS.
SO WHILE THOSE ARE IN THE OVEN BAKING, WE'RE GONNA MAKE OUR RELISH THAT GOES ON THIS, AND THIS IS A GREAT RELISH.
WE'RE GOING TO USE SOME CHOPPED OLIVES, AND YOU CAN BUY OLIVES ALREADY CHOPPED IN THE JAR.
I CHECKED THAT OUT THE OTHER DAY IN THE STORE, AND I WAS SO PSYCHED BECAUSE I DIDN'T HAVE TO STAND HERE AND CHOP AND FOLLOW THEM AROUND ON THE BOARD.
THEN WE'RE GOING TO PUT IN SOME ONION THAT'S BEEN CHOPPED, SOME CAPERS, AND A LITTLE JALAPENO PEPPER.
AND WITH THE JALAPENO, I WOULD SLICE IT DOWN THE MIDDLE, TAKE THE SEEDS AND THE MEMBRANE OUT, WASH YOUR HANDS REALLY WELL, AND THEN PROCEED WITH YOUR CHOPPING IT, BECAUSE THE MEMBRANE AND THE SEEDS IS WHAT IS REALLY, REALLY HOT AND WILL BURN YOUR HANDS.
SO WE'RE JUST GONNA GIVE THAT A TOSS.
WE'RE GONNA ADD IN A LITTLE BIT OF SEASONED VINEGAR TO THIS, AND IF YOU WANT, SOME SALT AND PEPPER, AND JUST TOSS THAT.
AND ABOUT THE LAST FIVE MINUTES OF THE COOKING OF YOUR FISH, YOU'LL WANT TO PUT YOUR ASPARAGUS ON THERE.
SO WE HAVE OUR ASPARAGUS HERE, AND YOU CAN SEE THE ENDS ARE KIND OF DRIED OUT.
SO WHAT I LIKE TO DO IS TAKE MINE AND JUST KIND OF CHOP OFF THOSE ENDS, AND THEN YOU'RE GONNA JUST TOSS IT ONTO YOUR BAKING SHEET, AND FINISH THAT UP IN THE OVEN.
IT WON'T TAKE BUT ABOUT FIVE MINUTES.
YOU DON'T WANT TO OVERCOOK IT TOO MUCH, OR IT'LL BE KIND OF SOGGY.
SO I LIKE MINE TENDER CRISP.
SO WE'RE JUST GONNA PUT THAT IN THERE, YOU CAN SPRITZ IT WITH A LITTLE BIT OF OIL AND SOME CRACKED BLACK PEPPER IF YOU LIKE, AND FINISH IT OFF FOR THE LAST FIVE MINUTES IN YOUR OVEN.
AND LET'S TAKE A LOOK AND SEE WHAT IT LOOKS LIKE WHEN IT'S FINISHED.
YOU CAN SEE THE FISH IS NICE AND CRUNCHY ON THE OUTSIDE, HAS THAT GREAT LEMON FLAVOR, AND THEN OUR ASPARAGUS IS DONE PERFECTLY, AND WE JUST TOP IT WITH OUR RELISH, AND IT IS A GREAT MIXTURE OF FLAVORS AND TEXTURES, AND I THINK YOU'RE REALLY, REALLY GONNA ENJOY IT.

AGAIN, THESE WERE, YOU KNOW, SOLID TWO AND A HALF POUND REALLY PRETTY SPANISH MACKEREL FOR THAT TIME OF YEAR, AND ON THAT TACKLE, THAT WAS JUST LOADS OF FUN-- AGAIN, USING JIGS.
IN THAT SITUATION, WE LIKE TO PROMOTE USING SINGLE HOOKS, 'CAUSE YOU SAW THAT DAY, WE DIDN'T KEEP ANY, BUT SINGLE HOOKS ARE A LOT EASIER TO GET OUT OF THEIR MOUTHS.
