You don't really have to.
There are lots of reasons.
I'm going to focus on one.
A will requires probate.
Probate is a court process.
The good part is that there is some supervision.
The bad part is the court process is public record and may require you to go to court.
A trust, if established correctly, does not require probate.
Trust are not usually public record.
There is more privacy with the trust, but no court supervision.
Probate in Washington typically is no more expensive or burdensome than a trust.
A big difference is the privacy that a trust affords over a will, which may be compelling for some people or situations.
