Shark fin soup was once a coveted delicacy at many Chinese restaurants in California. But concern over the killing of sharks simply for their fins has led to bans on the sale of shark fins in California and eight other states, in an effort to prevent the killing of an estimated 73 million sharks each year. In California, the ban has prompted restaurants to change their menus.
